3medium sweet potatoes, cut into 1 cm cubes

1medium red onion, sliced

4garlic cloves, peel left on

1 tsp (5 mL)vegetable oil

Kale salad base
-
4 cups (100 g)kale, stems removed, chopped

1 Tbsp (15 mL)olive oil

1½ cups (246 g)cooked chickpeas
-
1avocado, diced
-
¼ cup (34 g)roasted unsalted almonds, chopped
Dressing
-
1 Tbsp (15 mL)olive oil
-
1lemon, juiced
-
6fresh mint leaves, thinly sliced

½ tsponion powder
Directions
- Preheat the oven to 410°F (210°C)*. Add all the tray bake ingredients to a baking tray and toss to coat.
- Bake for 25 minutes, or until the potatoes are fully cooked through. Stir once halfway.
- Meanwhile, in a large bowl, add the kale and drizzle over the olive oil. Using your hands, massage the kale for 1 - 2 minutes to soften it.
- Add the dressing ingredients to a separate medium bowl. Peel the roasted garlic cloves and mash them into the bowl.
- When the potatoes have cooled, add them to the salad bowl along with the chickpeas, avocado, and dressing.
- Toss everything to coat. Sprinkle some roasted almonds on top, and enjoy!
Notes
- * We used top and bottom heating (not fan-assisted/convection).
Storage
- Best if enjoyed immediately.
- Store the salad separately from the dressing in airtight containers in the fridge for up to 3 days.
- Ideally, add the avocado only when ready to enjoy to avoid browning.

We bought some veggies from Too Good To Go and got way too much kale and some sweet potatoes. So we made this salad and we were very satisfied! 2 medium sweet potatoes were enough though and I don’t recommend using extra virgin olive oil.
This was so delicious, the dressing is really tasty. I used the recipe as a base and added roasted butternut squash, carrots, green beans and tofu. I will definitely make this again.

I don’t usually enjoy sweet potato as much as I did in this recipe, the salad as a whole tasted great. I’m somewhat lazy at the kitchen so I look for the easiest recipes and this one was a fast one. I’ve been following you for the last four years or so and I wanted to congratulate you for your amazing work and attention to detail. I’m not vegan but I try to incorporate more veggies in my life so your recipes work great. My home staple recipe I must say is the almond coconut granola, can’t live without it. It’s the best salad I’ve ever made however I used only one large sweet potato and also steamed the kale for 3 minutes so kill the bitterness after massaging it with olive oil. Next time I will use more than 100g of kale or less chickpeas because the ratio was not very good.
The kale has a very bitter taste. What am I doing wrong?
The overall concept was good. Roasted potatoes & onions were done, garlic needed more time. I would use black beans instead of garbanzo beans, & omit the mint. Two sweet potatoes were plenty, did not need 3. I would make again, with these changes.

Surprisingly delicious. I've never been a fan of Kale, and this recipe doesn't even cook it, however I do really enjoy sweet potato. I have to admit this recipe will be a regular in my diet now though.

Thank you for this delicious recipe! Didn't know what to expect from kale but it was very pleasant to eat prepared in this way. Leftovers were even more delicious the following day! Next time, I'll double or triple the mint because I love it and can never have enough, haha!
Nice flavors but needs more textural variation. I added sunflower seeds on top of the nuts but that was still not enough. to offset the mushiness. I would suggest swapping out some of the kale and/or roasted onion for raw radicchio (in addition to sunflower seeds!) I think that would add a nice level of crunch. Also I think you could easily increase the mint by at least half if you want a more flavorful dressing, I used 6 leaves and it was good but understated.

Simply fabulous!! The dressing is on point, and this being my first time massaging kale I was really impressed with the results. I swapped almonds for walnuts because it's what I had. The taste was even better the second day and the textures held up well!

So good, such a wonderful blend of flavors! Massaging the kale worked, and instead of avocado I added a snack-size guacamole to the dressing. The lemon in the dressing will keep the guac from browning. This is definitely a keeper!

This was amazing, even my husband who doesn’t like kale loved this recipe! I didn’t have red onion or maple syrup but yellow onion and agave worked perfectly fine. So much fiber and a kick of protein from the chickpeas makes this salad a winner!

This salad was absolutely delicious and easy to make. I separated the trey bake, kale, and dressing into separate containers so I could take it to work for lunch the next 3 days. Worked well.

Super easy to put together, and I LOVE the red onions and roasted garlic in this. The dressing was a little sharp for me, so I may add some tahini and decrease the vinegar slightly next time.

Wow! I did not expect it to taste that good because it's kale 😅. I am from Philippines and the ingredients in this recipe are not staples in our country, which is why there were a few things that I did not expect from this dish. The sweet potatoes - which are super delicious I could eat them all by themselves - and the sauce are the best about this dish, for me. I realized that I did not make enough after I had finished a bowl of this dish by myself. Can't wait to make it again and bring it to work 😍.
