Great base recipe! I used extra veggies and a different dressing that I happened to have prepped.
So good! Replaced the quinoa with pearl couscous and made it with small tomatoes and pine nuts instead of pistachio nuts. Delicious! 😋
Delicious! Made it for brunch and it was a huge hit, so much so that my family wanted to eat the leftovers the same night for dinner. And the roasted chickpeas are so good, I’m going to make them on their own just for snacking. Another great recipe…thank you PUL, you don’t disappoint!

Super easy to make but honestly one of the tastiest dishes I’ve ever had. I love how you can just substitute things easily (tahini >cashew butter, dates > cranberries) if you don’t have them. Looking forward to the leftovers tomorrow. 👏🏻
Another winner! Loved the complexity of this dish. I mixed all the ingredients ahead of time so I could travel with it and it was STILL perfect. Next time I’ll double the dressing. I also chopped the sun dried tomatoes too finely so they got lost in the salad. Loved the carrots and chickpeas so much I’ll double the amount next time. I also drizzled with some balsamic glaze just because and I liked that addition too. I will bring this one with me on trips regularly. Thanks for another staple in my travel recipes!
Wow, so tasty! I had to improvise a little bit and used cranberries since I had neither dates nor apricot in on hand - worked great as well. This is going to be a new go-to recipe!
Super yummi! We used barberries instead of dates (we hadn‘t had any home) and it worked deliciously as well.
I tried it today and I really liked it. I omitted the dates and used walnuts instead of pistachios. 10/10 would recommend. Simple and delicious.

I don't really expect to be surprised by a salad, but this was such an unusual flavour combination - I would never think to put dates and sun-dried tomatoes together but they add so much flavour, and the oregano and a really nice twist on a classic tahini-citrus base. I can also see myself adding extra veggies depending what we have in the fridge - today we had it with kale chips to take advantage of having the oven on. I used pecans instead pistachios, and subbed pumpkin seeds in one portion so I can take it to my nut-free workplace. Thanks for another awesome recipe!
Ammm wtf this salad is amazing. We just did it for lunch. We had a lot of quinoa and chickpeas leftover from a previous dinner and wow. The dressing really is amazing.
so good! I was a little uncertain about how the dates would fit in with this savory dish (especially alongside sun-dried tomatoes) but it worked well! with grain bowls like this I often like to add a base layer of greens, in this case I used massaged kale (and made double the sauce). I will definitely be revisiting this one!
I love this dish! I’ve made it a few times and , actually, pulled up the recipe this past time just to make the dressing. I actually have an inquiry/request, if possible: your dressings and vinaigrettes are all so primo! I love all the stand-alone dressing recipes but, also, the ones embedded or that are part of other recipes (like here ). I’m wondering if it would be possible to have a “dressings” category in the search feature of the app? NBD if it’s not possible, but just thought I’d ask- - thank you! 💕

This recipe is on repeat!! Soooo good! I add broccoli for some extra greens. I chop them until tiny florets and they crisp nicely along with the carrots and chickpeas. Don’t skimp on the sun dried tomatoes/ dates!

Love this. Added a base layer of lacinato kale. I massaged some of the dressing in while I waited for the veggies to come out of the oven. Excellent combo of veggies, I made a double batch of dressing so each guest could add their own.

Soooo good! 😍 A perfect mixturs of sweet, sour and salt! I added a bullion cube to the quinoa to give it extra flavor and added some fresh spinach. Since I used Tahina instead of tahini which was much more liquidy, I had to make a double batch of the dressing as the quinoa soaked it all up!
Nutty, tangy, sweet, savory, what’s not to love!? Love all the different textures. Plus, my hubby loved it too, and he doesn’t like quinoa! Definitely adding it to the rotation.

The dressing is so dang good! Added extra veggies to the roasting pan that were needing to be eaten and no matter what you add to this dish, it is a winner!

This recipe was SOOO good!!! I added broccoli, onions and peppers to the roasted veggies listed and it was still delicious. Leftovers were even better. Definitely making this again!!

Absolutely loved this recipe. It’s easy to make, packed with flavours and extremely filling. I added a bit of vegan goat cheese on top of each serving for extra texture and colour contrast. No leftovers, everybody loved it !
I don’t typically love quinoa but this is delicious!!! The flavors really work. Kelly the dressing separate so it wouldn’t get soggy for leftovers.

Simple to make and delicious. I had it for lunch this week and will be having it again in a few days because I want to make it for a few friends/family members. I’m looking forward to having it again so soon and I’m sure it’ll be a hit!!
So good! I just had some fresh coriander in my fridge so I used it instead of the parsley and it was so delicious! We will definitely make this again!
This was incredibly good. If I’m honest, my expectations were not high as we are not typically quinoa lovers. But the variety of flavors and textures made this utterly delicious and anything but boring. This will be a regular staple in our house.
