My school cafeteria growing up served meatball subs, and I have fond memories of those sandwiches. We've made a vegan version, with the baguettes slathered in warm marinara sauce, the "meat"balls made of chickpeas, and served with some soft vegan "mozarella" made from cashews.

Made this for the first time last night and my family really enjoyed it! The bread I bought was a bit too much for how small the “meatballs” were so I’ll definitely double the recipe next time. The vegan mozzarella was delicious but not as smooth as the pictures looked. Overall it was still a very good and filling meal:)

So delicious!! The homemade mozzarella was so easy to make and the texture so pleasant!!
With all the ingredients it was a perfect match!!

Meatballs were a little wet so I added more breadcrumbs but they tasted amazing! Mozzarella got thick very fast within 1 min, kept adding more water but was super thick. I think it tastes like mozzarella though! Helped with my meatball sub craving! Would definitely make again!

Hey Alicia, a lovely idea to add more breadcrumbs to the mixture if needed! For the mozzarella thickening fast, turning down the stove heat a bit could help. So happy the "meatball" sub was enjoyed 😃

I made there’s for dinner and they were fantastic. I cook my onions in wine near they end as they browned for more flavor .I also made my own marinara (semi-homemade). These were filling and delicious and I really enjoyed eating them 🤣. If I could post a picture I would . Also I used vegan cheese!

I doubled batch recipe
Cooking in the oven and smells amazing 😀
I used ready to eat quinoa by naplo brand ( worked brilliantly )
I did sub my nutritional yeast for vegan Parmesan
Will freeze some of the balls
I’ve prepped theses for tomorrows dinner
Can’t wait to enjoy them

These “meatballs” were delicious and I loved the umami flavor from the sun dried tomatoes! I air fried them at 380F for about 25 min and subbed in smoked paprika. I had one question about the instructions, it mentions to put all of the meatball ingredients in the food processor and then in the following step it says to add in an extra 1/4 cup of chickpeas that is not listed in the overview of ingredients. Does it mean add half of the chickpeas in two increments or 1/2 cup chickpeas in and then an additional 1/4cup?

This turned out way better than expected! I had to add more bread crumbs to ensure the “meat” balls stuck together, but otherwise it really hit the spot for the comfort food craving!

Hello! I just made this recipe and it is INCREDIBLE!!!!! It hits the spot 🤤🤤🤤
I just wanted to mention that i think it would be helpful to mention at step 6 that you put the dish in the oven for 30 min. For some might be obvious but for someone like me, a rookie, i didn’t think about that (actually tought that the balls need to rest for 30 min 😂😂). Other than that everything was amazing!!!!

These chickpea meatballs were amazing! Lots of flavour and really easy to make. I had some tortillas I needed to use up so I filled them with the ingredients and lightly pan fried them. So delicious—definitely a new staple for me.
