Hiii, DenisaS! This recipe is designed to comfortably serve about 4 people as a main. For 5 people, each serving would be rather small. If you're feeding five stomachs, you could stretch it to five if you serve it with hearty sides like roasted veggies, potatoes, or salad. If you want everyone to have a generous portion and no stress, I'd recommend scaling the recipe up to 5 for 6 servings. Hope it’s a hit at your Christmas table and enjoy 🫶

Thank you for your advice! It was delicious and everyone totally loved it. We made it from 5 servings and still have two slices for the next day. We served it with potatoes on the side and it was filling enough :)

Do you think you could turn this into a savoury pie?

Heyy Amy, oh what an interesting idea! We imagine this filling could work nicely as a savoury pie 😊 You can use the lentil-mushroom mixture as written and bake it in a pie dish instead of folding it into a Wellington. If using a pie crust (rather than puff pastry) let the filling cool slightly before assembling, then lightly prick the base of the crust with a fork to help prevent it from puffing up. You can also pre-bake the bottom crust for about 10 to 12 minutes before adding the filling to avoid sogginess (sprinkling some breadcrumbs onto the base can also help soak up any excess moisture). Bake until the pastry is golden and crisp, and serve the gravy on the side or spooned over after slicing. Let us know how it turns out if you experiment with it✨

Do you think I could freeze the beet wellington before cooking it, and de-freeze it in the oven later?

Heyy Nohya! That’s a great question. We haven’t tested freezing it ourselves, but my instinct would be to say probably not the best idea as there are quite a few elements here that could turn soggy once defrosted. That said, if you’d like to give it a try, I’d suggest assembling it up to the step before baking, then freezing it unbaked on a tray until solid, wrapping it well, and baking it straight from frozen later on. You might just need to add a bit of extra baking time until the crust turns golden. Let us know if you test it out ☺️✨

Great lentil option! We pound back the lentils so this was a welcome change from our norms. Will experiment next with a curried version with yams and walnuts. Hard to go wrong with puff pastry!

Absolutely loved it! My partner said that it felt like there was meat inside, even though he knew there were not, so if you are looking for something reminiscent of a meat meal, this would probably be a good option! We made mashed potatoes and sweet potatoes with it and it was delicious, very good pairing. Will make it again, but I'll try to mix the lentils in a blender instead, as mashing them was not a step that I liked to do.

langer de tijd nodig dan de tijd die aangegeven staat. En ik heb toch wel enige ervaring met koken. Realistische tijdinschattingen zou fijner zijn. Verder een super gerecht. De jus is ook echt heel erg goed bedacht!

This was really tastey! I forgot to make the gravy on my first serving and it was like a 3.75. Then, I had it with the heavy and it went up to a 4.5. It looks impressive but is very easy to make.
