Ingredients

Vegan gravy

  • ¼ cup (55g)
    unsalted vegan butter
  • 1
    large onion, thinly sliced
  • 2
    garlic cloves, crushed
  • ¼ cup (34g)
    all-purpose flour
  • 2 cups (480ml)
    vegetable broth
  • 1 Tbsp (15ml)
  • 2 tsp (11g)
  • ½ tsp
    dried thyme
  • ¼ tsp
    ground black pepper
  • ⅛ tsp
    salt, to taste

Directions

  1. Add the butter and onion to a saucepan over medium-high heat. Cook for about 15 minutes, until soft and golden.
  2. Add the garlic and flour and cook for 2 - 3 minutes. Stir throughout to toast.
  3. While whisking continuously, gradually pour in the broth until fully incorporated.
  4. Add the remaining ingredients and cook until the gravy has thickened, about 10 minutes.
  5. Optional step: use a immersion blender or regular blender to blend until smooth. Pour through a strainer for an extra smooth texture.
  6. Taste test and add salt to taste. Enjoy over your favourite dishes. Enjoy!

Whisking the flour mixture while slowly adding the liquid will really help to prevent lumps. If you notice lumps forming, stop adding the liquid and vigorously whisk the mixture to try and smooth it out before adding more. If you notice the lumps after adding all the ingredients, you can blend the mixture and strain it.

How do you make gravy vegan?

Making a gravy recipe without dairy involves a few big flavour-makers: caramelized onions, aromatic garlic, rich vegan butter, good quality vegetable stock, a slight cheesy-ness from nutritional yeast, and umami-richness from miso paste and soy sauce.

How do you make vegan gravy without gluten?

To make this gravy recipe gluten free, the flour in this recipe can be swapped for cornstarch, but cornstarch needs a different water ratio, compared to flour. Generally, we find 1 Tbsp of cornstarch per 1 cup of water makes a nice pourable consistency. For the original unscaled sauce, we suggest dissolving 2 Tbsp of cornstarch in a bit of water before adding it along with all the other ingredients in step 4.
