Made this last night on a whim, using two each of yellow, white, and red onions, and Better Than Bouillon Vegetarian Beef Base instead of veggie bouillon cubes. Simply incredible!

The cheese is much milder than the french cheese I remember my parents using but it was super tasty and I decided to make it again this morning for brunch because it's so quick.
Delicious soup! This was my first time having French onion soup as I never thought much of it since I thought it would just be a boring bowl of caramelized onions. This was so delicious though! I made a homemade baguette to top it with. I could not get over how delicious the vegan mozzarella was. Even my non-vegan loved the homemade cheese alternative.
Exceeded expectations! I made this last night with red onions and it was delicious. My husband normally has feedback for improvement, and he didn’t have any!
I substituted the flour with cornstarch to reduce gluten and it came out perfectly. I’ve made a lot of vegan cheeses with cashews, but I’ve never added arrowroot before and wow, this cheese really pulls like a mozzarella! I was blown away. I layered it on top of homemade baguette slices, and after broiling, the presentation of this dish was gorgeous.
I’m making this again tomorrow but with yellow onions, and I’m going to cook the onions for longer to see if they will break up more. I’m also pairing this with the beetroot and citrus salad from this app.

Hey dear! I live in Paris since a few years and I really love their oignon soup! And the fried cheese is so good, I hope the purée will make up to it ! Sometimes it’s a real gem, sometimes it’s too salty, so I’m really excited to try your take on it!
Just a question/ if I wanna make it gluten-free, which kind of flour should me I use ? I have soy and corn for now..

Not gonna lie, I was not sure about that mozzarella but darn it was good!! This recipe totally pays off! It takes a bit of time to make and there’s a bit to clean up but the result was so tasty, I’m definitely making this again soon!
Made this spontaneously last night and it was really good and so easy to make! I used store bought vegan cheddar since I didn't have time to soak the cashews. It was a really cozy meal and the soup tasted as if it took hours to make. This is gonna be a staple for sure 😃

not kidding when i say this is the best soup i have ever made.. i was literally eating the onions straight out of the pan and with the bread and cashew cheese and fresh thyme and the miso!!!! i am in love. this was JUST what i needed and more thank you so much <33333
I‘m absolutely in love with the taste of this french onion soup. It‘s very easy to make and to reduce the time even more, i used storebought mozzarella. I habe never before cookes with miso paste- but it gives the soup the little extra!
