I took the easy way out and used a jar of onion confit that I had in the pantry; also used a pizza dough, since I could not find pastry dough. Even with these modifications, this made a lovely and quick dinner <3

Such a yummy recipe. I made your recipe for the pie crust, divine. Melt in your mouth. I'm newer to cooking with beets, so I didn't use as many, but I'm delightfully surprised at how much I like them. I would definitely recommend this recipe 😋

I’m thinking about trying this with an extra layer of sliced potatoes - do you think there might be issues if I do that?

I think you definitely could, I'll just share two concerns in hopes that knowing about them might help to avoid them. The first is that the sliced potatoes might not cook through, as they tend to take longer to cook than the pie dough. To mitigate this, consider slicing the potatoes rather thin. That brings up my second concern, which is that slicing too thin or unevenly could cause parts to burn. For this, a mandolin might help to ensure even-thickness pieces. I hope this helps, and do let us know how it goes if you try with potatoes - it sound like it would be heavenly!

We are not super found of beet in my family but this recipe worked !! It's really good. We made a lot of onions jam.

This is something very different than I would normally make and we really liked it! A great way to eat a lot of beets.

I did reduce the cooking time of the onion and the baking time of the galette a bit.

I roasted the beets in the oven instead of cooking which I really liked. Also unfortunately I didn’t have any nutritional yeast for the feta, but in the end result it didn’t bother at all.

I used coconut sugar instead of refined sugar and it went fine.

Will be making again!
