Hi Sadia and team, I am looking to host a dinner next week and am so looking forward to mixing and matching meal ideas from the menu plans. Hey there, Hope, thanks for the question! Each beetroot for us weighed around 100 grams when peeled and cooked, so that was about 200 grams total (give or take). I hope this helps! 😊

GF couscous can actually be pretty hard to come by in a lot of places. Is there something else that could be substituted into this recipe? Maybe millet?

Hey there, Sage, thanks for sharing your experience with gluten-free couscous. We haven't tested it out, but imagine millet could work. Unlike couscous, the millet will need to be cooked on the stove (with the bouillon cube added to the cooking water) - and simply cook until very soft. Then it can be mixed with the beet purée. Let us know if you experiment with it :)
