I made this recipe for a Christmas party and everyone loved it. I don’t have the strongest food processor and I had to add a bit of water to blend everything into a smooth paste. This made the cheese a bit soft and my Christmas trees a bit short, but still they were tasty and much appreciated. If there is any tip you give when working with less powerful food processors, it would help. :)

When using a less powerful food processor, you can try soaking cashews longer in hot water or pre-chopping nuts + seeds for easier blending. Gradually adding water also helps so we can avoid adding any extra unnecessary amounts 😊

I made this little tree for a potluck dinner, it was delicious and a crowd pleaser :)
I had a hard time shaping the base, I'm not entirely sure why. I made half a portion (so 6 servings = 1 tree), and 1) my food processor couldn't handle it (it's not super heavy duty plus I think it was too little to grab on to), and 2) it ended up a bit sticky, and goopy. I managed to shape it and balanced it somehow, and it solidified a little in the fridge, so overall it was a success but I'm wondering if I should have let it rest in the fridge before shaping or is there an ingredient I could add to the base to make it less creamy/sticky? Thank you:)

Hey there, Anna, so glad that the Christmas Tree Cheese was enjoyed! A powerful food processor is indeed helpful for this recipe as it helps smooth out the mixture. If you feel your food processor had to work extra hard to blend everything, that can also heat up the mixture a bit which can result in the texture you described. For sure, refrigerating it for a bit before shaping it in this case would definitely help. Happy holidays! 😊
