I made the second batch with oat milk (ran out of soy) and it's just as delicious!
These are even better than they look! They pack a nutritious punch because of the veggies. My non-veg friends said they smelled amazing when I brought a couple for my breakfast and heated them up.

I didn’t really enjoy these, they have a strong taste of bacon but not of much else. They are also not cheesy at all. I will try to remake them and add more nutritional yeast, and a lot more spices. They weren’t bad, but tasted really bland to me.
Tried this with soy mince instead of vegan bacon. Turned out great. Also made homemade vegan mayo, so delicious!
These are so good! Mine turned out a little bit dry but I think it's because I didn't have a scale to make sure I used enough zucchini. Next time I'll try using more. Thank you for the recipe!
These were really delicious with pumpkin soup. Added walnuts and used a combination of about 8 different garden fresh green herbs instead of just chives and planted a whole Kalamata olive on each muffin. Serious mother in law points!! 😁 she absolutely loved them.
