The Spanish omelette or tortilla de patatas, is one of the national dishes of the country, it generally consists of potato and eggs and may or may not have onion in it as well. We swapped the eggs for a mixture with chickpea flour, which creates a very similar taste and texture! It's commonly cut into bite-sized pieces and served on cocktail sticks as a tapa (a Spanish appetizer or snack).

Sympa et sans gluten. Si c'est à refaire je diviserais la recette par 2 afin d'avoir une galette plus fine avec une cuisson mieux répartie

I’ve always wanted to try making a vegan tortilla, I grew up eating my dad’s original recipe (which was always the best I ever had) and I was excited to try this version!! I was pleasantly surprised actually as the texture was quite similar to the original, more well done than runny but I don’t mind that. And well my dad always fried the potatoes and onion (yes team onion) but I was glad to kinda boil them and reduce the amount of oil used!!

However, the taste of the chickpea flour was a bit overpowering for me. But I think next time I’ll increase the amount of the other spices to maybe mask it a bit more.

But overall really good and I was happy to finically be able to recreate a childhood favorite of mine ❤️

Hi Alba, we're glad to hear you enjoyed the vegan tortilla! To mask the taste of chickpea flour, you can increase the other spices or add some smoked paprika or cumin. This might help balance the flavours more to your liking. It can also help to check the packaging to see if you're using chickpea (garbanzo bean) flour, made from whole dried chickpeas. Besan or gram flour may be used interchangeably, but this type of chickpea flour has a more nutty taste. We hope this helps for now that you enjoy recreating your childhood favourite 🫶✨

Just wondering: which size is your pan? We’ve got an 28 cm pan and it’s quite tight for the 15-servings tortilla. Only flipping with little whoopsi accidents :D tastes still very nice!

A really great alternative to the real thing and we will make this again.
Ours was a little dry and powdery so we will see how it works for the next time - perhaps we overdid it.

Thank you, Phillipa! In case you used the cup measurements, it may help to ensure that the flour isn't too packed in the cup, but rather, gently spooned into the measuring cup and levelled 😊

Hi again,
I had some potatoes to use up so I decided to make it again today but I've just realised that I'm out of chickpea flour and I don't have dried ones either. Can you switch it with a spelt flour or a wholegrain flour? I also have rice flour and oat flour in.

Hey Phillipa, we haven't tried so we can't say with certainty that it'll work out. Spelt flour might work but it'll likely impact the flavour and texture of the omelette. We wouldn't recommend wholegrain, rice or oat flour as they are quite different from chickpea flour. Let us know if you experiment with it 🤗

Hey Antonina, as we haven't tested it with corn flour we can't say for sure how it'll work out. You can always try, though it will give a different texture and flavour compared to chickpea flour. Chickpea flour provides a unique taste and binds well, making it ideal for eggless omelettes. Corn flour, on the other hand, might affect the final texture and impart a distinct corn flavour. You may also need to adjust the amount of water, as corn flour reacts differently to liquids. If you do use corn flour, it's a good idea to start with a similar amount as chickpea flour and adjust as needed based on the batter's consistency. Let us know how it goes if you try it out!

I’m Spanish and I can say there is not much difference from a traditional tortilla. Perhaps a bit creamier in texture and absolutely fantastic :)
