Was missing a few important ingredients (lemon, parsley, mint), it was still very tasty! Unfortunately the eggplant tasted a little watery, maybe it was low quality?

Hello hello, Nike! So glad to hear it was still tasty even without the herbs and lemon. These do add a pop so we'd highly recommend adding them if possible! As for the eggplant, it is meant to be a bit juicy, but if you give this recipe another go, try picking eggplants that are shiny, firm, and feel heavy for their size. They tend to roast up creamier. Some folks also look for “male” eggplants which are said to be less bitter. You can spot them by checking the base: a small, round dimple usually means it’s male. A quick image search for “male vs. female eggplant” can help you spot the difference ✨

I had two eggplants and leftovers from the meal prep - cooked brown lentils and rice with seitan and vegetables. So I baked the eggplants and prepared the leftovers for the topping. It was really top. 😁 Although I haven't used the actual ingredients, the design was pretty similar 😅
