1 Tbsp (15 mL)olive oil

1 tsp (2 g)whole cumin seeds

1zucchini, chopped

1small eggplant, chopped

½ tspsalt

1½ cups (270 g)cooked brown lentils

1green bell pepper, chopped
Garlic yogurt sauce

1 cup (240 mL)unsweetened soy yogurt

2garlic cloves, crushed
-
½lemon, juiced
-
2 Tbsp (2 g)fresh mint leaves, thinly sliced

¼ tspsalt

4pita breads

2medium tomatoes, diced

1 cup (35 g)romaine lettuce, thinly sliced

Directions
- Add the oil to a large pan on high heat. When hot, toast the cumin seeds for 2 minutes, stirring throughout. Then add the zucchini, eggplant, and salt. Cook this for 2 - 3 minutes, stirring occasionally.
- Add the lentils, bell pepper, and za'atar mix to the pan. Drop the heat to medium and cover with a lid. Cook until the veggies are softened to your liking, about 8 - 10 minutes.
- Meanwhile, to a medium bowl, add in the yogurt, garlic, lemon juice, mint leaves, and salt. Stir, and set aside.
- Warm up your wraps, if desired. We like to brush a bit of water on both sides of the pita, and then add it to the preheated skillet to soften and lightly toast.
- To assemble, spread some hummus and yogurt sauce on the pita, and top with both fresh and sautéed veggies, Drizzle over some tahini, fold the wraps, and enjoy!
Storage
- Best if enjoyed immediately.
- Wraps, fillings, and sauce can be stored separately in airtight containers in the fridge for up to 3 days.

Wonderful to have in the fridge for a quick meal. So tasty and adaptable.
I love this meal so much!! It's so easy to make and yet complex in the flavors. I'm a big fan of the garlicky yogurt sauce and could eat that on its own, and sometimes make just that part alone 😄 Can't wait to make this for dinner again tonight!

I did make a few changes to make this recipe work for me. I made my own zaatar, but I couldn’t find sumac so I subbed lemon zest instead and I had cooked pinto beans on hand so I used those in place of lentils.
Perfect combo of everything! I especially loved the toasted cumin with Za’atar! Came together quickly and easily too.

This is really yummy! I used regular tortillas instead of pita breads, but I think the pita breads would indeed work better here because of the load of veggies 😋

I made the wraps for the first time today, together with the 'classic garlic & lemon hummus' and I used pomegranate seeds. All the flavors come together so nicely. For me the sweet hint of the pomegranate really finished it all off. Got some left overs so I will be enjoying it again later this week 😊

The za’atar wrap is sooo delicious this might be my favorite meal right now. I’m a dialysis patient so I didn’t add any lentils and swapped the tomatoes for pomegranate. I also enjoyed cilantro on this dish just as much If not more than the mint. I also ate it on top of basmati rice it’s so versatile and yummy.
This was easily the tastiest wrap I've ever had! I loved the combination of spices, the tangy yoghurt sauce, tahini and hummus. Not to mention being incredibly filling and nutritious! I used a mixed herb seasoning on the veggies, but will try to find the Za'atar mix...I also replaced soy yoghurt with an unsweetened coconut yoghurt, since I couldn't find any in my area.
The recipe was enough for many servings - so I'll have plenty left for the rest of the week! Thank you PUL 😊
I made this today for lunch. When I put in the spice mix, I first wasn't sure of how it's gonna taste, but once I wrapped it together and tasted it, my doubts went away. I think overdid it a bit on the cumin seeds, but still enjoyed it a lot. Thanks Sadia for enriching our lives with vegan recipes that really don't make you wish you had meat in them.
I love this recipe ! All the spices work so well. We usually add some roasted potatos, they also go very well in this dish ! But even without them it's so good and also very easy !!!

I made this for dinner and it was so comforting and full of flavors! This will definitely become a staple recipe in our house. I used whole-grain wraps but will try with pita bread next time (would love a recipe from you on this by the way if you have any!).
Just one detail: it would be great if you could add the recommended cooking time for the vegetables once they are on medium heat with the lid on (I did manage without it though by simply tasting it as I went).

These were delicious! Made for quick and easy lunch. I was surprised by how much I loved the mint in there-- definitely will be looking to work it in to more of my recipes in the future. I added a pinch of red pepper flakes to the sauteed veggies and a tiny bit of a bite.
