Liked it very much. I didn't add pasta and lentils. Instead I added 2 carrots and half a coliflor.
It's really delicious! I tried it out with zucchini, penne and lemon juice. I can't wait to try it out with eggplant next

Absolutely delicious! All those bits of vegetables combined with my favorite pasta sauce and pasta (I used penne) were just heavenly. I enjoyed this with fresh basil and vegan parmesan.as per your suggestion 😊

YUM! This tastes soooo good and is very easy and quick to make (I cooked the lentils and pasta ahead of time, which sped things even more at dinner time). Thanks for suggesting zucchini as a replacement for eggplant, as I'm not a fan of the latter, but loved it with zucchini. My family doesn't like crunchy fresh veggies ,so the more I can put in the dish itself the better.

This was pretty flavorful! Love the variety of vegetables! The cooking time seems off for the carrot portion, they were still rather crunchy by the time I sat down to eat the meal.
This was a delicious meal!! I loved and enjoyed it soo much 🤩 Even though I had no spinach and sun-dried tomatoes, the natural taste of the vegetables gave the sauce a very rich taste. I also loved that the softness of the eggplants and the crunch of the carots remained. I will make it surely one more time with spinach and sun-dried tomatoes. I can already imagine how it would taste 🤤 And because I personally like some spiciness in tomato-sauces, I added some Korean chilli-paste (gojuchang). This was a great combination, too 😊

Oh gosh, I can’t even comprehend into words how delicious this was. I replaced the eggplant with zucchini and sundried tomato in oil with red peppers in oil instead. I loved it and will serve as a weekly night rotation for dinners. I loved the emphasis of adding veggies in as I’m not someone too keen on them but in all, combination was perfect. Sprinkled some basil on top and was so pleased!
Once I get better at chopping this would be a great weeknight meal. Very tasty! My 10 year old loved it and enjoyed helping chop the eggplant!
