As an FYI, the pictures look like they are Cannelloni noodles not Manicotti. I used Cannelloni because there was no Manicotti in my area and the Cannelloni looked exactly like the pictures of the recipe, and it turned out great. Manicotti is typically ridged, which affects how it bakes and absorbs sauces. Cannelloni is often filled with sauces like this vs Manicotti can be more vegetable filled instead. Just a note. Also I used the Oven Ready Cannelloni and gave it some more time than the recipe said

Traditionally, cannelloni is made from soft, lasagna-like pasta sheets that are filled and rolled, while manicotti is the Italian-American version that’s typically sold as pre-formed tubes. That was our logic for calling it manicotti, since the pasta shown here is a tube shape that gets filled, that said, cannelloni is also very commonly sold as hard, tube-shaped pasta these days, so the names get used interchangeably depending on what’s available. We’ve updated the recipe to list cannelloni, with manicotti as a substitute, and we’ve also added this clarification to the headnote under the Info tab. Sauce and filling very tasty! I made this with canneloni shells, they needed a few minutes more so I think I'm gonna pre-cook them next time. Somehow, if I use uncooked pasta in baked dishes, it never fully cooks unless I pre-boil it in water. Could be nice if it were possible to provide some directions on how to replace uncommon ingredients!

Delicious! Unfortunately my store only had rigatoni so I stuffed a lot of those, lol
I also had to bake longer. Next time I’d double the béchamel sauce because it was so good.

I made this with jumbo shells as I’m trying to use ingredients already in my pantry, and it worked well! I cooked the shells beforehand as I wasn’t sure if I could put them in the oven uncooked like the manicotti. My partner and I loved it!

Hey Ruth, we imagine you can freeze the tofu mix for later use but it may change the texture slightly. We'd recommend transferring it to an airtight container or freezer bag, ensuring to remove any excess air. Thaw it in the refrigerator overnight, and drain any water - if there is any, before using it in the recipe 🤗

This was pretty easy to make, I just crumbled the tofu with my hands and stuffed the shells with a spoon but don't think they were as stuffed as the recipe because I got way more than seven shells.
I'm also just starting to come around to the flavor of nutritional yeast but with that said, I did still like the sauce! I'm definitely looking forward to leftovers !
