Amazing! I roasted on parchment papered baking tray in oven and turned out great - turning and basting halfway through. Cooked faster than I expected. Amazing sauce/paste. Not too spicy. Had to find Fenugreek spice on Amazon.
It was great, I made with quinoa salat, but it was delicious.

We combined this with a sauce of 2 Tbs vegan yoghurt, 2 Tbs vegan mayo, half a lemon, 1 spring onion, 1 garlic part, some olive oil and salt + peper to taste
This is absolutely delicious. I swapped the parsley out with fresh coriander.
I will eat this again and again. It’s so simple to make but the flavour profile is amazing.
Tested it out yesterday and loved it. Added some sunflower and pomegranate seeds as well for some bite ☺️

I‘ve been a bit lazy so I‘ve put the eggplants in the oven.
Turned out fine.
I garnished the eggplants with pomegranate seeds :)
Also I mixed the yogurt in the same bowl the marinade was in. So the yogurt got a bit spicier.
While this was delicious, my marinade came out so thick despite using 1.5 limes (didn’t have lemons). It was also hard to keep the marinade from burning - I had to cook on low heat to avoid burning the second batch that I made.

This was so flavourful and so good, my whole family loved it!
Ran out of marinade too quickly and then attempted to make a second batch but the whole result ended with way too much lemon. Results turned out sour and off putting.
Excellent recipe! The marinade is spicy and delicious. I used the air fryer to cook the eggplant, perhaps sacrificing a little flavour, but I felt lazy. This summer this will be a staple in my kitchen!
