This tender, spiced eggplant is delicious and packed full of flavour. Its flavours are inspired by the special red-coloured marinade used in Indian tandoori dishes which are baked in a tandoor (clay oven). We've opted to grill ours, although the recipe is also perfect for a barbecue.

Amazing! I roasted on parchment papered baking tray in oven and turned out great - turning and basting halfway through. Cooked faster than I expected. Amazing sauce/paste. Not too spicy. Had to find Fenugreek spice on Amazon.

Made it with 2 tbsp paprika powder instead of 2 tsp bc my short attention span makes it impossible to read instructions 😅 it was still very good though

We combined this with a sauce of 2 Tbs vegan yoghurt, 2 Tbs vegan mayo, half a lemon, 1 spring onion, 1 garlic part, some olive oil and salt + peper to taste

This is absolutely delicious. I swapped the parsley out with fresh coriander.
I will eat this again and again. It’s so simple to make but the flavour profile is amazing.

I really liked this dish a lot.

I‘ve been a bit lazy so I‘ve put the eggplants in the oven.
Turned out fine.

I garnished the eggplants with pomegranate seeds :)

Also I mixed the yogurt in the same bowl the marinade was in. So the yogurt got a bit spicier.

While this was delicious, my marinade came out so thick despite using 1.5 limes (didn’t have lemons). It was also hard to keep the marinade from burning - I had to cook on low heat to avoid burning the second batch that I made.

Hey Shellie, limes can give less juice than lemons so it may help to use two if you have the recipe another try! So glad it was still enjoyed :)

Hey Sara, we imagine it could 😊 Perhaps around 400-425°F (204-220°C) may be a nice place to start and you could broil the eggplant if needed to help give it a crispier texture. If you're keeping a close eye on it, you could also aim to flip the slices when they seem more golden to help promote even crispiness

Ran out of marinade too quickly and then attempted to make a second batch but the whole result ended with way too much lemon. Results turned out sour and off putting.

Hey Samantha, oh no! We're so sorry you didn't enjoy this dish. As soon as we saw your comment we immediately re-tested it, and for us the marinade made enough for the eggplants indicated. We also found it pleasantly zesty, but not overpowering. My prediction is perhaps that too much marinade was slathered over the eggplant slices, which could be why you ran out too quickly, and also why you found the taste too intense. The intention is to spread a very thin layer of marinade over each slice. I've updated the directions to indicate this so it's clear for others. Your feedback is much appreciated, Samantha, and always helps us improve what we do 😊 I hope this helps in case you decide to give the recipe another try!

Excellent recipe! The marinade is spicy and delicious. I used the air fryer to cook the eggplant, perhaps sacrificing a little flavour, but I felt lazy. This summer this will be a staple in my kitchen!
