Caramelized Grape & Chickpea Salad

Charred lemon dressing

1½ Tbsp (22 mL)extra virgin olive oil

Directions
- Cut the lemons in half. Set aside.
- Bring a non-stick pan or cast iron to high heat. Then add the lemon, cut-side down.
- Cook until deeply caramelized and browned, about 3 minutes. Set aside to cool down slightly.
- Clean the pan, then return to the heat. Add the oil, grapes, chickpeas, and salt. Cook until the chickpeas are golden and the grapes are slightly charred.
- Meanwhile, juice and strain the lemons into a glass jar.
- Add the remaining dressing ingredients to the jar.
- Close the jar and shake vigorously until the dressing has emulsified.
- Optionally, Add the oil and croutons to a pan on medium-high heat. Toast for 2 - 3 minutes so they are extra crisp and flavourful.
- Only when ready to serve, combine the lettuce, grapes, chickpeas and croutons in a large bowl. Drizzle over the dressing, and enjoy!
Storage
- Best to enjoy immediately as the lettuce wilts soon after being tossed with the dressing.
- The dressing can be stored in the fridge for up to 2 days.

So surprised at how filling and enjoyable this was! The grapes and croutons and chickpeas are all a different flavour and texture experience so it’s not a boring salad at all!

Side note: I love love love the scaling feature on the app. I only had 125g of lamb lettuce, so I scaled down to 1 and 2/3 portions, which made it easy to adjust the amount of other ingredients.

Hi. Not heard of lambs lettuce before, and unfortunately neither had my grocery. Perhaps it’s not a thing here in Vancouver? Any suggestions for alternative greens that would go well?

I love the salad ❤️ but second time I added pistachios, swapped half of lemon for half orange, I added some garlic for frying cutons- made it even better! My husband is not vegan, he loved burrata with this salad :)
Simple and delicious! Never would have thought to cook grapes but it works!
