Ingredients

Fried rice

  • ⅔ cup (133 g)
    uncooked white rice
  • 1 Tbsp (15 mL)
    vegetable oil

Dressing

Salad base

  • 1½ cups (266 g)
    cooked kidney beans
  • 1½ cups (246 g)
    cooked chickpeas
  • 1½ cups (256 g)
    cooked pinto beans
  • ¼ cup (4 g)
    fresh parsley, chopped

Directions

  1. Cook the rice according to the package instructions. Then spread it out on a large tray and let it cool off*.
  2. Add oil to a large pan and heat over medium-high.
  3. Press rice into a flat layer on the pan and cook for about 15 - 20 minutes, until golden and crispy to your liking. Toss once or twice while cooking.
  4. Meanwhile, mix the dressing ingredients together in a small bowl. Set aside.
  5. Add the beans and parsley to a large bowl.
  6. Break the rice into bite-sized clumps and add them to the bowl. When ready to enjoy, pour over the dressing and toss to coat. Enjoy!

Notes

  • * If you have leftover rice on hand, use that instead. Note the ratio of uncooked rice to cooked rice is 1 to 3. So ⅔ cup uncooked rice yielded 2 cups when cooked.

Storage

  • This salad is best enjoyed immediately.
  • The beans and dressing can be tossed together or separately, and stored in an airtight container in the fridge for up to 2 days. Add the rice just before serving.

I add roasted peanuts for an extra crunch as well as chopped green chillies to make it spicy

Made this recipe multiple times, it’s so good!!! I used toasted sesame oil to fry the rice, and replace most of the oil in the dressing with toasted sesame oil since I don’t have sesame seeds :)

This was a delicious recipe! I was looking at the nutrition information...does each serving really have 773 calories???

For those trying to decrease calories and fat, instead of adding 3T of oil (for the default 3 servings) to the dressing, I used 3T aquafaba instead. It worked perfectly for me! The dressing is so flavorful I couldn't tell there wasn't any oil. However, I did use the oil to brown the rice.

This was amazing! So quick to make and incredibly flavourful! I made the recipe more out of curiosity and because it looked so quick & easy but it exceeded both mine and my picky husband's expectations. Really nice and simple. I always use quinoa in place of rice (feel it’s a healthier grain) and it works in this recipe too - goes crunchy but doesn’t stick together like rice does.

Fried rice is my all time favourite dish so I couldn't wait to try this recipe. However, letting the rice fried for 20mn straight made it completely burned and dried :( The flavor of the dresing is really good but the burnt rice is not healthy at all!

Hey Ly, sorry to hear the rice burnt! It sounds like the heat might’ve been a bit too high, or it needed a bit more stirring. If you decide to give it another try, lowering the heat and tossing it more often should help prevent burning. Our cooking time is a reference, based on our stovetop. Using the visual cute we suggest, cooking the rice until it's golden and crispy, might be a better method for your stove 🤗
