Ingredients
Fried rice
-
⅔ cup (133 g)uncooked white rice
-
1 Tbsp (15 mL)vegetable oil
Dressing
-
1small shallot, thinly sliced
-
2garlic cloves, crushed
-
1lime, juiced
-
-
3 Tbsp (45 mL)olive oil
-
1 Tbsp (9 g)toasted sesame seeds
Salad base
-
1½ cups (266 g)cooked kidney beans
-
1½ cups (246 g)cooked chickpeas
-
1½ cups (256 g)cooked pinto beans
-
¼ cup (4 g)fresh parsley, chopped
Directions
- Cook the rice according to the package instructions. Then spread it out on a large tray and let it cool off*.
- Add oil to a large pan and heat over medium-high.
- Press rice into a flat layer on the pan and cook for about 15 - 20 minutes, until golden and crispy to your liking. Toss once or twice while cooking.
- Meanwhile, mix the dressing ingredients together in a small bowl. Set aside.
- Add the beans and parsley to a large bowl.
- Break the rice into bite-sized clumps and add them to the bowl. When ready to enjoy, pour over the dressing and toss to coat. Enjoy!
Notes
- * If you have leftover rice on hand, use that instead. Note the ratio of uncooked rice to cooked rice is 1 to 3. So ⅔ cup uncooked rice yielded 2 cups when cooked.
Storage
- This salad is best enjoyed immediately.
- The beans and dressing can be tossed together or separately, and stored in an airtight container in the fridge for up to 2 days. Add the rice just before serving.

Very good!
Can you share/export the grocery list?
I absolutely love this recipe and it’s in our weekly rotation!
I add roasted peanuts for an extra crunch as well as chopped green chillies to make it spicy
Overall an excellent easy recipe! :)
Made this recipe multiple times, it’s so good!!! I used toasted sesame oil to fry the rice, and replace most of the oil in the dressing with toasted sesame oil since I don’t have sesame seeds :)
This is so tasty !!! Thank you 🙏
I absolutely love this quick and easy recipe! It has become my go-to for those hectic work weeks. Having frozen beans on hand makes it a breeze to toss this delicious meal together in no time. Highly recommended for anyone looking for a convenient and tasty option
Loved it 😍
A great pantry meal! And easy to add to if you want to eat as a main.
OMG. This is simple to make and delicious! The dressing!!! So glad I found d pickup limes 😌
Delicious salad! Everything works perfectly together.
This was a delicious recipe! I was looking at the nutrition information...does each serving really have 773 calories???
For those trying to decrease calories and fat, instead of adding 3T of oil (for the default 3 servings) to the dressing, I used 3T aquafaba instead. It worked perfectly for me! The dressing is so flavorful I couldn't tell there wasn't any oil. However, I did use the oil to brown the rice.
Thanks for the recipe. I'll be making this often.
Loved it. The crispy rice was perfectly chewy and paired well with the softer beans. I also added some leftover smoked brisket. So delicious and filling!
Filling and so so delicious!!
We swapped out pinto beans for black beans cause that’s what we had and it was delicious! Definitely adding this dish to the monthly rotation.
My family absolutely loved this salad. In fact, I gave my grandson and taste and he said: ""Grandma you have to give me some more of that! Why does it have to taste so good! He loved it.
I have shared it with friends and family. That is how much I love it!
This a wonderful balance of flavor and texture! It is creamy with the beans and crunchy and packed with flavor. Man I am glad I will have leftovers and definitely a great way to use up rice.
I have to be honest and say not really my type of thing with the crunchy rice, nice flavours through and I'm glad I tried it 😀. I do like multi bean salads.
Made this and I’m in love!
I absolutely love this recipe!! The flavors are amazing. Everyone loved it. It will definitely be a regular dish in my home.
I've never left a comment on a recipe online in my life. This recipe was THAT GOOD for me. It's a permanent keeper. Thank you!
Really good and perfect for meal prep! Thank you again for such an amazing recipe 🥰
What an incredible combination of flavours! The dressing is amazing and the crispy rice adds a perfect contrast to the soft beans 😋
The dressing goes perfectly with the beans and rice, I also hadn't tried frying rice into chunks before, but it was definitely interesting. Success!
I made this recipe the day I found it. Had leftover tumeric rice and chickpeas . I LOVED it!!! Will make again . I like the flavors the tumeric rice gives it too. Thank you for this simple yet amazing recipe !!
This was amazing! So quick to make and incredibly flavourful! I made the recipe more out of curiosity and because it looked so quick & easy but it exceeded both mine and my picky husband's expectations. He went absolutely nuts for it and is already packing up leftovers to take to work tomorrow. I will definitely add this to the weekly rotation.
Really nice and simple. I always use quinoa in place of rice (feel it’s a healthier grain) and it works in this recipe too - goes crunchy but doesn’t stick together like rice does.
Disregard. I just found it. Apologies. Love the app!
I have made it and it is delicious. I am tracking my nutrients for health purposes and my question is the recipes don’t state how much a serving is or even how many servings it makes. All say per serving but I don’t know what the serving size is. Please help
This looks delicious! Will definitely make it 😊
I approve this recipe! So tasty 😍
Fried rice is my all time favourite dish so I couldn't wait to try this recipe. However, letting the rice fried for 20mn straight made it completely burned and dried :( The flavor of the dresing is really good but the burnt rice is not healthy at all!
OMG soooo good!! Can't wait to make it again!
This is delicious, easy and super healthy!
