I absolutely love this salad and already know it will become a staple! I made the full recipe just for myself and ate it for 4 days straight this week without getting bored. With a salad like this, I nearly always want to add in some kind of vegan chicken, vegan feta etc, but not with this recipe. It was so satisfying, even though it is just veggies. I'm so happy to have found a super healthy and balanced meal that I'll actually crave! Thank you guys for your fantastic work!
Such a great meal! There was at least one vegetable included that each person in my family didn't like, but it all blends so incredibly that we wouldn't take a thing out. This is amazing as a light salad or thrown into a whole wheat tortilla as a wrap with a little more substance :)

that dressing is very delicious and perfect for this salad. i like that there is olive oil in the dressing and not just avocado, it emulsifies wonderfully.
Only made the dressing now to pour over a simple pearl couscous salad - let me tell you, that salad tasted anything but simple with this green goddess dressing! Completely elevated my humble side dish of pearl couscous with pumpkin seeds, cucumber, tomato, and romain lettuce pieces. 100% recommend.
(I have made the whole recipe before as well, and that rocks too!)
So glad I finally crawled from under my rock and discovered this salad, it's so delicious and beautiful, it will be a new favorite. Like some other people mentioned, I'll also try the dressing for a pasta dish. But for now, I'm still glowing from the original recipe :-)

It’s the dressing for me! You can put it on anything, I used leftover dressing on wraps and sandwiches. Absolutely delicious!

What really made this dish was hands down the dressing. I highly recommend it as its own recipe! As I was scraping off all that I could from the blender, I was more than happy to lick the spatula!
Great salad. Even my non-vegan husband enjoyed it and asked me to make it more often. Take this as a big compliment 😃 The sauce is indeed delicious in itself. I ate the salad with 2 slices of smoked tofu.

Delicious! I have made this a couple times and added extra lemon and a roasted jalapeño for a spicy kick. Even better the next day.

The dressing was delicious with a few extras - some chilli flakes and tahini rounded it out for me. It makes a bunch but it kept perfectly green overnight in the fridge and I used it like pesto the next day for avocado toast which I may have liked even better!
I just made this for dinner, and it was delicious! I ate it with a Korean scallion pancake from Trader Joe’s, and it was very satisfying. If you’re one of the 12 other vegans who dislike nooch as much as I do, I cut the amount in 1/2 and it was still a strong taste, so keep that in mind (I’ll omit it entirely next time). Otherwise a winner!
Very refreshing! This recipe makes a ton as well but it’s very delicious as a side salad.
