Perfectly spiced gazpacho! Fell in love with it in Spain and I’m so glad I could recreate it at home. I didn’t add couscous but enjoyed it with roasted bread. Perfect summer dinner!

Absolutely love this!! Perfect lunch 🥰 substituted pine nuts for almonds as it's all I had and used balsamic vinegar instead of red wine. Delicious:)

What a refreshing light lunch on a hot summer day! Had some leftover cucumber and it was perfect! The pine nuts are are the stars.
