This was SUCH a party pleaser! A real showstopper! My friends haven't stopped talking about it. I made it for Rosh Hashanah dinner as a starter, and it was a perfect fit because I had a celiac attendee. I ended up broiling/grilling the zucchini instead, because I didn't have a non-stick pan and it worked great. The star of this show is absolutely the pesto -- DELICIOUS!

I loooved it! I followed Lisa Steinhäuser's advice and used strawberries in place of pomegranate seeds. Who knew they'd pair so well with mint pesto?!

I don't know. It didn't worked out for me with my pan and my gas stove. Also it is nothing I would do during the week, takes a little bit of time. Also the recommended portion is to small as a main dish.
The idea is good, but maybe something for special day and as a side dish.

This is a great one - I also added some grilled Aubergine (same logic) and replaced pomegranate with strawberries since they are in season where I live just now - topped with some balsamic glaze; just awesome
