This was SUCH a party pleaser! A real showstopper! My friends haven't stopped talking about it. I made it for Rosh Hashanah dinner as a starter, and it was a perfect fit because I had a celiac attendee. I ended up broiling/grilling the zucchini instead, because I didn't have a non-stick pan and it worked great. The star of this show is absolutely the pesto -- DELICIOUS!

I loooved it! I followed Lisa Steinhäuser's advice and used strawberries in place of pomegranate seeds. Who knew they'd pair so well with mint pesto?! I'll be making it again and again, thank you PUL for yet another great recipe 🤗

I don't know. It didn't worked out for me with my pan and my gas stove. Also it is nothing I would do during the week, takes a little bit of time. Also the recommended portion is to small as a main dish. The idea is good, but maybe something for special day and as a side dish.

This is a great one - I also added some grilled Aubergine (same logic) and replaced pomegranate with strawberries since they are in season where I live just now - topped with some balsamic glaze; just awesome
