We love mushrooms for their ability to retain their amazing texture during cooking while also easily soaking up flavours. In this recipe, mushrooms are the main star. They get a mouthwatering makeover with some garlic, fresh herbs, and light grilling.

Skipped putting them on skewers and sauteed., then added a couple cut up tomatoes, some fresh spinach and cooked noodles which became a very quick meal. Will add chickpeas next time as a protein. Very good!

Made this without the skewers (didn't have any around) and had these on toast with houmous and it was an absolute success!
