I love this one! The "cottage cheese" turned out so great. I added a bit more yogurt and some miso to the mixture but otherwise I didn't change anything. The combination of tomatoes, peaches and basil is incredibly refreshing. Perfect for the summer months 🌞

This was delicious! I had a similar issue as another commenter that the cottage cheeze was a bit dry but I think I used too much tofu. But this is only the second vegan cottage cheese recipe I've tried and it tastes fantastic. I also used walnuts instead of pine nuts because I had them to hand and they were great! The flavours are balanced and subtle and would be perfect for a picnic. I would say because there arent too many ingredients, you need to use the best tomatoes you can find to elevate this but deffo will make again :)

Amazing, super easy to adapt, delicious and a great way to get some protein in first thing in the morning. Took me a bit longer to prepare but definitely going to make it again and I figure it'll go quicker

This was delicious! We opted for mango and parsley because thats what we had. We did not have pine nuts so, we candied pecans. This recipe is adaptable to the seasons. We made this breakfast and it was a great start to our day. I am incorporating more protein to my diet.

The consistency of the cottage cheese turned out really well. Combined with the salad, it tastes really delicious. We used fresh peaches since they are in season right now. We'll definitely be making this recipe more often. 🥰

Either I was wrong with the amount of tofu (I have an analog balance) or there was too much for the liquid preparation (according to the photos). I only removed part of the tofu and gradually added the liquid preparation until it got the texture. Delicious.
