1 Tbsp (9 g)all-purpose flour

1¼ cups (300 mL)water

1vegetable bouillon cube, crumbled

3 cups (510 g)cooked butter beans

½ cup (120 mL)soy cooking cream

5 cups (150 g)fresh spinach, chopped

2 Tbsp (30 mL)white wine vinegar

¼ tspground black pepper

3slices rustic bread, toasted
Optional garnish

Directions
- Add the oil and leek to a large pot over medium-high heat. Cook for 3 - 4 minutes.
- Next, add the garlic, thyme, and rosemary. Cook for 2 minutes, until fragrant.
- Add the sun-dried tomatoes and flour. Continue to stir, cooking for 1 minute.
- Add the water and bouillon cube. Bring to a boil, then reduce to a simmer and cook uncovered until thickened.
- Stir in the beans and cooking cream. Cook for another 2 minutes.
- Lastly, stir in the spinach, white wine vinegar and black pepper.
- Serve with toasted bread, garnish, and enjoy!

My second time making this recipe and I love it. I used chickpea flour for a gluten free option and homemade vegetable broth instead of water. I didn’t use a bouillon so I added more salt and onion powder.

Hi! I love the app and the recipes in it, however I wanted to raise a little concern that in number of recipes (like this one) they use bullion cube. It would be fantastic if a swap option was available for that item. Our family and many of our friends prefer to avoid them and it limits choices of recipes here.

Hi! Do you think substituting spinach for kale would be okay? I have soo much kale in my garden.
I made this stew a few times already and all I can say is that it's delicious and very comforting. I am planning to make it again soon and freeze the leftovers. Currently I have a huge (almost 750 g) leek and I was wondering how many servings I could get out of that. Maybe you know how much did the leek you used in the recipe weigh?
I love this recipe and it is so easy and fast.
Only change I made is using canned butterbeans/ whitebeans instead (much more convenient when you forgot to soak the dried beans the night before + they dont have the dried ones in my regular supermarket).

It happens so rarely that I don't really want to change anything about a recipe after I make it the first time but this is one. It's so nourishing, easy, jam packed with flavor and nutritious.
(after making it 8 times I couldn't help it, I suggest adding chili flakes in the same quantities as the thyme and adding roasted pumpkin seeds on top)

Oh my God this was divine. I couldnot find butter beans but used nothern beans instead ,omit the cream add a touch of cumin and paprika. I used raw spinach under the beans... I would never imagine. Just divine
My canned lima beans were kind of bitter. Recipe was okay. I might have made it too acidic - either more tomato or more lemon juice. Might try again.
Wanted to love this since cozy creamy recipes are my favourite but it just didn’t measure up to the other recipes I’ve tried from this app (which have all been amazing). It felt plain despite my increasing the seasoning in the recipe. I think it could do with some mushrooms and maybe nutritional yeast which I can see a few others have added, i’ll try that next time and maybe sub soy cream for cashew cream and see how it goes!

Loved this recipe!! It came together super quickly with simple ingredients. I served it with some crusty sundried tomato bread from our local bakery. I couldn’t find vegan cream so swapped for a big scoop of plain unsweetened yogurt and it worked perfectly. Definitely adding to the regular rotation of weeknight meals!

I made this and today and it is just heavenly delicious and absolute comfort food.
I was just wondering if anyone tried for cooking time with dired white beans yet since we have those at home far more often.
I'm starting to feel like a broken record when rating these recipes, because once again this one is outstanding. It's Tuscan chicken pasta-esque in flavor, obviously without the chicken or the pasta.
I've never used butter beans dried or canned, but we've been missing out, they're great! I will say, we found we needed to add a fair amount of salt, we think because we made our beans from dried and didn't use salt in our initial preparation.
Again, we've never made or even used them before, I only bring this up for anyone else who isn't used to prepping dry beans or whose local markets also don't sell butter beans/only carry the small green limas in cans; this is the only recipe we've tried where we've found it to be a bit bland when following the recipe and also the only recipe we've made using beans that weren't canned simply because our local markets don't sell them. This might be VERY obvious to others, but to us bean cooking novices we were surprised that for once we needed to add more salt than was recommended, we're learning! Once we seasoned to our taste it was perfection! My husband commented that he's noticed that the recipes we've tried from this app are very filling, with just a few exceptions. This one is super hearty and we found the allotted portions were actually on the large side for our family of normally big eaters.
This recipe is sooo delicious and very fast and easy to make . Thyme and rosemary is a great match. The sun dried tomato adds umami … dare I say , like bacon would.

Have made it 4 times till now and it's so satisfying. I do prefer substituting the spinach for kale for an extra herbal bite! Usually make about twice the recipe for leftovers

An amazing recipe, can easily be multiplied for more servings. For more variation I swapped 2/3 of the buttered beans for kidney and other beans and it was still very delicious even the next day! ☺️

I not usually a big fan of beans and this is the first time I’m trying Lima beans. I had to sub the cooking cream for coconut cream because that’s what I have and what I can find in my local grocery store and I also subbed the white vinegar for apple cider vinegar because that’s what I had on hand. I have to say, this is as good as the picture looked. I thought the coconut cream might over power the other ingredients but I couldn’t taste the coconut at all! It was creamy with just the right amount of acidity and the flavours of the sun dried tomatoes just added another layer of tartness to it but not as tomatoes as a tomato paste would’ve. I’ll totally make this again for a weekly meal rotation in the future! Thanks for the wonderful recipe pick up limes team! ❤️

We don't have soy cream or vegan imitations of regular ingredients where I live so I made this dish with DIY cashew milk. Cashew milk thickened as I heated it and it gave this nice consistency without flour or cream.

This turned out better than what I had expected and I was already expecting a lot from the dish! Added in some red onion and mushrooms that I needed to use and topped with chili onion oil. 100% will be making again!
I was a bit short on the ingredients so I used zucchini instead of spinach (added with tomatoes), coconut milk instead of cooking cream and apple cider vinegar instead of white wine one. It turned out delicious, I can't wait to try it out with original ingredients next time!

This dish comes together very quickly - love the sun-dried tomato in this. I would say the dish reminded me more of a cream of spinach then a bean stew but it was delicious regardless of what it is called. We enjoyed it with some herb crackers.
For such a simple dish this packs a major flavour punch. I’ve made it with the white wine vinegar and with lemon juice and find the lemon juice far superior. At the moment we are making this dish every week and doubling up to have leftovers for lunch the next day. 10/10

We made this last night and it was delicious. Two slight changes because of lack of availability to butter beans and dried rosemary. (I know!) I used Royal Corona beans which I cooked. They are meaty and creamy. Fresh rosemary instead of dried and a citrus champagne vinegar (didn't have plain white wine vinegar) which gave a nice vibrancy. The substitutions were not true changes to the recipe. This is one more PUL recipe that was easy to follow and yielded a delicious meal.

Delicious! Very comforting. Sundried tomatoes aren't readily available in the Caribbean so I tried some canned fired roasted tomatoes and it tasted great.

I used frozen spinach and it worked well, just added it a bit sooner in the process, with the water, to allow to thaw.

Love this! So quick and easy! I made this after going for a run to have something substantial and it hit the spot! Love that so many of the ingredients can be kept in the pantry too. I'd be making this one often for sure!

I made this for dinner and it was delicious and SOOO quick!! 😛 two substitutions 1) used a red onion instead of a leek, 2) Italian seasoning instead of just the two herbs included in the recipe.
The entire meal took me about 15 minutes to throw together. Definitely making this again!!
