Chocolate Peppermint Truffles

3.5 oz (100 g)plain vegan cream cheese

1candy cane, crushed (optional)
Directions
- Add the cookies to a food processor.
- Blend into fine crumbs.
- Add the cream cheese and peppermint extract and pulse a few times to combine.
- Transfer the mixture to a bowl and place it in the freezer for 30 minutes to firm up.
- Remove the bowl from the freezer, scoop up a tablespoon of the mixture, and use your hands to roll it into a ball. Place on a parchment-lined plate, then transfer back to the freezer while melting the chocolate.
- Place the chocolate in a heatproof bowl and microwave at 600W. Stop to stir every 20 seconds until fully melted. Alternatively, melt in a double boiler over the stove. Set aside to cool slightly.
- Set a truffle on a fork and spoon melted chocolate over it to coat. Swipe away any excess chocolate, then return it to the lined plate.
- Sprinkle over a crushed candy cane for decoration while the chocolate is still wet. Then repeat with the remaining truffles.
- Place the truffles in the fridge to harden until ready to eat. Enjoy!
Storage
- Store in an airtight container in the fridge for up to 1 week.
- Store well sealed in the freezer for up to 2 months.

Tried these for the first time today. Very delicious!
I couldn’t find any plain cream cheese, so I swopped it for thick coconut yoghurt. And for some colour, I added fresh strawberries to the plate.

Would it be okay if I replace peppermint extract with peppermint oil?
Super easy to make and very tasty! I used freezedried raspberries as decorative topping, and I think dried flower petals wouldalso be very pretty!

Hello PUL family! I am making these tomorrow but had trouble sourcing peppermint extract. I managed to find alcohol free peppermint spirits at my local health food store. I was assured by someone who works there they are safe to consume internally. Any thoughts about how to use them as a substitute in this recipe?

Delicious! If you're gluten-intolerant and live in Australia, I used Kez's Vanilla bean cookies and cream bickies. I bought two packets and used 8 large bickies which was the perfect amount. They taste just like After Dinner Mints :D

So, I didn’t have any extract handy so I played around a bit. After freezing them and before chocolate coating, I dipped them in a jam, froze them again, chocolate coated them, and garnished with pomegranate seeds because no candy cane. After sharing them I was asked to make a batch for a coworker and sell them officially lol. I instead referred them to the holy grail of tasty recipes aka PUL :)

For those considering the chocolate sandwich cookies...I used them and it still turned out delicious!
I made these for my work holiday party on Thursday and they FLEW off the dessert table! I had people coming up to me after saying that they were the best item on the dessert table! Coworkers were raving and asking where I bought them, and when I said I made them they were in shock! One coworker also said how excited he was that they were vegan, because "delicious treats like this help encourage people to become or try being vegan." I myself am not vegan but all of your recipes are absolutely delicious so I thought I would try something different (and to be inclusive if one of my coworkers was vegan). This recipe is perfect for parties and was SO easy to make, I encourage anyone interested to give it a try! (But make sure to save one for yourself because there will not be any leftovers!)
