11 oz (300 g)silken tofu, drained

2 Tbsp (28 g)granulated sugar

1½ cups (184 g)fresh raspberries, for mashing

2 cups (246 g)fresh raspberries, remaining whole
Whip

½ cup (120 mL)vegan whipping cream

2 Tbsp (28 g)granulated sugar

Directions
- Add the chocolate mousse ingredients to a food processor. Blend until smooth.
- To each of the serving glasses, add ¼ cup of raspberries. Lightly mash the raspberries with the back of a spoon or tamper.
- Reserve about ¼ of the blended chocolate mixture in a bowl. Divide the remaining between your glasses over the mashed raspberries. Place the glasses in the fridge while preparing the next layer.
- Add all of the whip ingredients to a large bowl. Whip with an electric hand mixer until stiff peaks form, about 7 minutes. Reserve some of the whipped cream as a topping if desired.
- Then add the reserved blended chocolate mixture to the remaining whipped cream and gently fold together.
- Remove the cups from the fridge and add some whole raspberries as the next layer.
- Then divide this whipped chocolate mousse between the glasses.
- Top with the reserved whipped cream and any desired garnishes. Enjoy!
Notes
- †Melt the chocolate in a microwave or on the stove, using a double boiler. Let the chocolate cool off a bit.
Storage
- This dessert is best enjoyed the same day it's made.
- Store leftovers in the fridge for up to 1 day.

Hi there! Just curious, what is the substitute for the melted chocolate?
Is cacao powder plus oil OK? A quick Internet search said that is a substitute, but I want to make sure that will work in this recipe.

what a great vegan dessert! i made it for friends and they were suprised that its vegan. you cant taste the silken tofu - just the yummy chocolate flavour. i will do it again!

Made this and everyone loved it! Will be honest, I was lazy so I made only 2 layers: the choco + whip layers (didn't do the middle layer of combining) and it was sooo delicious. Wil be making it again for sure!
