Do you think it's possible to make this in the slowcooker?

Hi Nynke! Hmm perhaps with a couple of tweaks 😊 We haven't tested it so can't say for sure, but here are some thoughts: We’d recommend still blending the paste and cooking it on the stovetop first with the oil, star anise, lime leaves, and lemongrass until it’s dark and fragrant. From there, you could transfer the cooked paste to the slow cooker and add the coconut milk, ketjap manis, tamarind, soy sauce, salt, and the pre-boiled jackfruit. Cook on low for about 4 to 6 hours, stirring once or twice if you can. It would probably be best to add the potatoes during the last 1½ to 2 hours so they don’t turn mushy. We’d also toast the shredded coconut separately and stir it in at the end, then remove the star anise, lime leaves, and lemongrass before serving. If the sauce feels a bit loose, you can leave the lid off for the final 20 to 30 minutes to help it thicken! Hope this helps 🫶

What an amazing dish! I was lucky to have most of the ingredients in the pantry but if you don't it's really worth making the trip to an asian supermarket.

I can't believe I'm still the only one that left a review for this recipe. It is so rich in flavor and really a great way to get acquainted with jackfruit and many wonderful spices. I hope the recipe will get a bit more love and attention it deserves.
