Fermented carrots are a probiotic-rich snack that combine the sweetness of the carrots with a zesty tang from the fermentation process. They are packed with beneficial bacteria. We used colourful carrots, which resulted in a bright pink brine after the fermentation. You can add them to a salad or have them as a snack with some hummus for example.
