Hi there I’m just wondering if I can use maple syrup or agave instead of golden syrup

Hi Hannah! Good question. We haven't tried using either of those as substitutes for this recipe yet, so we can't say for sure. To achieve the chewy but soft texture for caramels, we tend to prefer to use golden or corn syrup. If you try to swap with maple or agave, the texture of the caramels will likely be altered. They will probably be much softer. You might need to cook the mixture longer (we strongly suggest using a thermometer for this recipe!). Maple syrup will also give a very distinct flavour and agave will likely lead to a much sweeter caramel. Let us know if you give either of those a try. We will keep it in mind to try a caramel recipe without using golden syrup :)

I made them as a christmas gift and my family absolutely loved it! As we don't like the salty note in sweet treats if substituted the sea salt for tonka bean instead. Turned out great. Thank you and happy holidays :-)

I could only find condensed oat milk in my area, and the flavor profile reminded me of butterscotch candies. Yum! If I had condensed coconut milk, would that still have been the outcome?

Hey Amanda! Yes, condensed coconut milk gives a similar sweet flavour, but is a tad more rich because of the extra fat content. So glad it was enjoyed with condensed oat milk though 😃

Has anyone substituted the vegan butter for other vegan butter spreads like Olivani or nuttelex? We don’t get vegan butter in nz grocery stores but I’d love to try this dish if the alternatives don’t affect the taste! :)

Hey Sorelle, we haven't tested it out, but vegan margarine should work as well if that's accessible. We would really suggest using a thermometer to check for a candy stage, since margarine will give a different water content and may effect the cooking time.
