How long is the estimated maximum for keeping the yoghurt in the cheese cloth? I'm asking because it's a bit hard to leave it "only" overnight. So, it would be either around 4 hours or 16+ hours, because of my schedule... Thank you 😊

Heyy Marijana, thanks for the question 🤗 you’ve got some flexibility here. Around 4 hours will give you a lightly thickened, creamy result, closer to a spreadable yogurt. That said, overnight (12 to 16 hours) is ideal for a classic, firm labneh texture. You can safely leave it to strain for up to about 24 hours in the fridge. It’ll just get tangier and thicker the longer it sits!

This is so tasty! I left it in my fridge for about 12 hours and it got nice and thick, topped it with garlic, rosemary and oregano and served with some some homemade sourdough and it was such a lovely savoury breakfast!! Thanks so much x
