Ingredients

London fog

  • 2 cups (480 mL)
    unsweetened soy milk
  • 2 tsp (4 g)
    loose Earl Grey tea leaves
  • 1 tsp (5 mL)
    maple syrup, or more to taste
  • 2
    cinnamon sticks

Optional toppings

  • ground cinnamon
  • foamed milk

Directions

  1. To a saucepan on medium heat, add the milk, tea, maple syrup, and cinnamon. Whisk continuously until the milk starts to simmer, then stir in the vanilla and remove from the heat.
  2. Cover and allow to steep for 1 - 2 minutes further for a stronger tea flavour. Then strain the tea into mugs and enjoy!

Notes

  • Nutrition tip: aim to use plant-based milk that is fortified with calcium.

Yes, Earl Grey tea is made up of black tea leaves. For a caffeine-free twist, use decaffeinated Earl Grey or an alternative herbal tea.

How do I make a London Fog recipe taste stronger? What about milder?

For a bolder flavour, let the tea steep for an additional 1-2 minutes before straining. On the other hand, for a milder flavour, skip covering the tea and letting the drink steep.

It is so comforting and yummy☺️
I would like the cinnamon and vanilla to come through a bit more, which I struggled with on my first try despite following the recipe. I might consider leaving the whole spices in the beverage overnight before simmering or use ground cinnamon

After a rainy day, I did some meal prep in the evening. When I was done, my kids and husband were asleep. There was a big fat book waiting for me to start reading. So I decided to try this London fog and it was absolutely perfect for the situation, curled up on the couch with a book while it rained outside. The caffeine kept me awake though and I slept fairly late. Although it could've been the books fault. I'll have to try it again with rooibos tonight. You know, for science.

I'm a die-hard coffee drinker. Tea is nice but doesn't comfort my soul. That being said, London Fogs are cozy rainy days, fuzzy blankets, and a good novel all wrapped up in a finger-warming mug of joy. A perfect afternoon pick me up. This is such a good recipe.
