Beetroot Latte

¼ cup (60 mL)brewed espresso (optional)
Directions
- Combine the soy milk, beet, dates, and vanilla extract in a high-powered blender until smooth and creamy.
- Pour this mixture straight into a saucepan on medium-high heat. If your blender isn't very powerful, or if you don't like small fibres to remain in your drink, strain the mixture through a sieve while pouring it into the saucepan.
- Add the cinnamon stick and maple syrup. Let the mixture heat up, stirring throughout to prevent burning. Let simmer for about 3 minutes, then remove the cinnamon stick.
- Pour into mugs and optionally add a shot of espresso. Stir, and enjoy!
Notes

I am enjoying this recipe. I didn't have dates so I substituted dried cherries (6) and a few grapes. For the espresso I used a small amount of instant coffee granules. IT IS A HIT! Thank you for the recipe.
Use half raw and half cooked beet, half and half ricemilk and soymilk, one date and cinnamonpowder.

This is absolutely delicious. I must admit I was sceptical at first but it blew me away!

This was delicious! I'm a new beetroot convert and I'm trying to experiment with different combinations. I was a bit sceptic about a sweet beetroot recipe, but I'm so glad I gave it a shot. This latte is such a fun way to incorporate more goodness into hot drinks.

Never a disappointment! Such a great way to enjoy a hot smoothie on cold days with a bad throat. I also added some chia seeds to increase the protein!

I love beetroot and I love this latte! It might look strange for others but the combo is amazing and I would recommend it to everyone. I've tried both versions: with and without espresso, both delicious but hey, I am a coffee lover so... :-D
This drink is very good! For someone who did not particularly liked beetroot in the past, that was a pleasant surprise. It could be a great alternative for getting children used to beetroot as well.
