Peanut butter latte

2½ cups (600 mL)unsweetened soy milk†

½ cup (65 g)raw cashews

4Medjool dates, pits removed

2 Tbsp (30 mL)peanut butter
-
¼ cup (60 mL)brewed espresso

¼ tspground cinnamon
Directions
- Add all of the ingredients together to a high-speed blender. Blend until smooth.
- Pour into a saucepan on medium-high heat and stir continuously to prevent burning until heated through. If you prefer a thinner consistency, add some more plant milk.
- Pour into your favourite mugs, add maple syrup if desired for more sweetness, and enjoy!

I really enjoyed this drink despite not being a coffee person. It is rich, flavourful, not overly sweet, and quite easy to make. I managed to prepare 3 portions (default in recipe) in advance and enjoy during the week, and it worked so well ☺️. I mixed all ingredients in the blender, poured the cold mixture into jars, sealed and put in the fridge. I just had to shake the mixture before heating up in a saucepan. I accidentally overheated the drink on the stove, making it too thick; I did not realise that the dense mixture “concealed” the simmering bubbles😅
This is insanely rich but very tasty! I tried it when I was trying to increase my date intake during pregnancy. I am sure baby liked it :) I reduced the soy milk and increased the coffee to make it a little less intense. As with other recipes, you need to let the nuts and dates blend with a little soy milk for several minutes before adding other ingredients in order for it to get it smooth and frothy. Enjoy!

Long time fan and lover of all things PUL. I am looking to forward to trying this recipe. I don’t drink coffee….should I add more milk as a replacement for the liquid or can I just leave it out without adjusting liquid? Thank you.
So good but I’d recommend a strainer for the bits of date and cashews.

This is the first recipe I tried from the app and I was so excited! It was delicious—rich and creamy. I used almond milk, instant decaf coffee powder and fewer dates to make it lower sugar. I added a pinch of sea salt at the end for more of a salted caramel flavour.

Lovely! I was a little shy of the measurement for cashews but maybe because I only had hemp milk it was still thick and creamy.
I made this with almonds and cow's milk (I'm not vegan) and omitted the coffee. IT was so good, I don't think I can have regular hot chocolate again. I also used vanilla paste in lieu of vanilla extract as I didn't have any. My blender didn't chop all the almonds but it was still so good! Thank you for your magic creations!
This is one of my favourite fancy lattes! Also, a year or so ago I went through a brief period of really struggling with breakfast (it was stress/grief related and I was managing it with a therapist). This latte was an easy and delicious way to trick my body into having something with a bit of nutrients in the morning before I got myself into my day and could manage something more substantial (which was often PuL granola 😆)

Super delicious and decadent. This comes out super thick, which makes me think of it as more like a hot smoothie than a latte. But other than that, this is great for a treat.
Delicious! I use maple syrup instead of dates to keep it smooth since I don’t have a powerful blender.
This was delicious! I made the espresso with a Moka pot and used almond milk instead of soy. I will be making this again!
