I really enjoyed the flavor of these, but there was something just a bit off about them. It might have been my tahini was a few months past its best by date (not the expiration, so I still use it); I’m not sure. I’d definitely give these another try with a fresher tahini and a little less salt.

Easy enough to make and my daughter really enjoyed them. I didn't find them that crispy, so was disappointed tbh. Was expecting something different I guess 🤷

Hey Steve, sorry to hear you didn't love this one. It's true that the tahini can soften them a bit, but they should still have some crunch. If they turned out too soft, it could be due to an overcrowded tray (or not enough baking time). Depending on the size of your baking tray, you might need to bake the kale chips in batches, as overcrowding can cause the kale to steam rather than roast. Mine needed a longer cook time by about 5 minutes. I also wasn't a huge fan of dressing, a little too noochy for me, but I think part of that is I so strongly associate tahini with my usual combinations that have never included nutritional yeast. I ended up adding some lemon juice and topping the whole thing with a bit more salt after the massage. It ended up pretty good! My first time making roasted kale because I had a bunch to get rid of and I really do like tahini. I'll give it 4 stars instead of three because my kale was old and that may have a something to do with it and with my modifications, I did end up really enjoying it, so it's a good starter recipe to make improvisations catering to your tastes

Hey Kiarra, thanks for taking the time to share your experiences with the kale chips. Adjusting cook time and adding lemon juice and extra salt are lovely ideas. In case it helps in the future, if you're using nutritional yeast powder instead of flakes, starting with less and adding more to taste can help. For reference, we use the flakes so they're lighter (less dense/less concentrated) than the powdered variety 🤗

Is it possible to make these with frozen kale

Hey friend, we don't recommend it. Frozen kale is often blanched and then frozen, which means it retains more moisture than fresh kale. This excess moisture can make it difficult to achieve the crisp texture that's desired in kale chips. Do let us know if you give it a try anyhow 🤗
