Tteokguk (떡국), also known as 'sliced rice cake soup', is a traditional Korean dish that is typically eaten on Korean New Year's Day, but nowadays enjoyed all year round. Because we add dumplings to our version of this soup, it is actually called "tteok mandu guk" (떡만둣국), the sliced rice cakes add a chewiness and the mandu add a nice bite to this clear broth. The flavour is pretty neutral, slightly salty and can be spiced up with the toppings.

The soup is surprisingly delicious and filling when it all comes together! I topped it with some crispy chilli oil and subbed beyond sausage for the shreds 😋 thank you for this! I had some leftover rice cakes and making this was a lot of fun 🥰

Would this recipe work without the mock beef? (I'm a vegetarian and I don't buy fake meats) I feel like there are enough of other tasty things for it to still be good without?

Hey Nohya, this recipe can still be delicious without the mock beef. Feel free to skip the mock meat or replace it with another protein source like (marinated) tofu. Add some extra toppings or soy sauce for extra flavour if preferred! 🤗

I made this and it was delicious! I had trouble finding plant based beef shreds so I used plant based ground beef instead and it still turned out great!
