It was fine, but not my favourite Udon noodles dish.
You can't really go wrong with udon and this is applied to this recipe as well, but oh boy was that spicy! I loved every bite of it, but next time I will definitely put less gochujang and chilli...

Unlike your other noodle recipes I found it a bit bland - I think there is an error in the conversion to 2 servings as it seems to be too much noodles and less sauce. But it’s a quick meal and can be easily tweaked to suit personal preferences 👍🏻
Since my kimchi was decently spicy, I put less chilli paste and it turned out quite delicious. I also added some red bell pepper and some cloud ear mushrooms.
Very tasty! But I couldn’t bring myself to cook the kimchi! I want to keep the probiotics alive! Haha
So tasty! I would agree with some other comments, it does need something fatty. I added some peanuts, and for those who eat eggs, a fried egg on top was great.
It was delicious! I've swapped soy beans peas (because I did not had those in the freezer), added paprika and sprinkled some peanuts on top. Definitely will make this again!
Super easy, healthy, and flavorful. I bought shredded carrots & cabbage and microwaved the udon noodles, so it really only took 10 minutes!

This was delicious, I loved how savory it was and all the flavors. I didn’t have edamame, so I air fried some tofu to go with this. Will definitely make this again soon!
Excellent - spicy and very tasty. Super quick to put together, especially if you use straight-to-wok udon noodles. I added spinach for extra greens, too.
Good dish, quick and easy with decent flavor and spice. I do feel like it's missing some fat though. Eating it now, I'm really wishing I had chopped peanuts, which I think would be a good addition. I might try mixing in some tahini to the sauce if I make it again, though that would change the dish quite a bit. Also maybe less onions to cut the sweetness a bit, but that's personal preference. All in all a good, quick recipe that was very easy to follow along with!

Delicious, but choose your kimchi carefully! If you have a low tolerance for spice, use a more American kimchi (instead of buying the more traditional stuff from the nice Korean lady at the market 🥵).

I’m a big fan of Korean-inspired dishes, and this one doesn’t disappoint! I wouldn’t have thought of using kimchi this way if it hadn’t been for this recipe, what a great idea! I also added some mushrooms, broccoli and tofu. The recipe goes straight to the favorites!

I made this for dinner tonight and it was so good!! The sauce was very spicy and sweet, and my partner and I both enjoyed it. We added some mushrooms to it and really liked the addition.
This is such a fantastic quick recipe! I’ve never had udon noodles before this, but they’ve been the noodle I’ve been looking for all my life. It was a great way to use up the rest of the kimchi in my fridge. It’s the perfect dish to hit the spot and tofu/broccoli make great additions :)
