Delicious noodles! I doubled the recipe. I used about 21 oz of dry noodles as I don’t have access to pre-cooked ones. I also have found the amount of heat in the PUL recipe doesn’t affect my husband and I, so I did 1.5x the amount of gochujang. Unfortunately, the noodles still had no kick to them, so I’ll double it next. We both loved these noodles, and I’ll certainly make them again!

I liked the flavor, but had an issue with the ingredients. I’d go with extra firm tofu next time; firm was too watery and fell apart in the pan, causing a layer of crusted on starch and tofu water. That, or pressing the tofu before cooking. I ended up dumping it into the air fryer to remove the crusted starch layer from my enamel Dutch oven in order to continue with the recipe.
