At first, as I did not have mushrooms my onions and garlic burnt, so I re-cut new ones and let them cook way less long and with a less intense fire, and then followed the recipe normally, and it was delicious! I will definitely be making it again in the future, and hopefully this time I can get mushrooms too!

I tripled the recipe and used soba noodles. It was absolutely delicious but took my dad and I two hours to make!!!

This was really tasty. I made it according to the recipe with the exception of using only half the sriracha for fear it would be too spicy, but it wasn’t spicy, so I think the full amount would have been fine. Once the thinned sauce has been mixed with the noodles and vegetables, is there a good way to thin it again? It gets a little bit pasty when it sits. Maybe just some water?

Very tasteful. I could not make it in the given time though.
I didn’t make the full recipe as I didn’t have all the ingredients so I just made the tofu to go with other things I had in a salad bowl and used the sauce over the top. It was easy to make and delicious. Really good to find a flavourful tofu recipe without cornflour and not much oil. Definitely recommend
Defo ticks the boxes as a rainbow meal! Love all the colours and variety of nutrient they imply. The texture and flavour of the marinated baked tofu is super satisfying. Takes a little while to prepare so not in my regular rota of PUL meals, but one I’ve rolled out when entertaining.
Delicious! I made it with just the veggies and no tofu. I put the peanut sauce on top of all the veggies and noodles. Great meal!
