Directions
- Cook the noodles according to the package instructions.
- Add the oil to a large pan on medium-high heat. When hot, add the shallots and garlic. Cook for about 2 minutes, or until lightly golden.
- Then add the carrots, bell peppers, and cabbage. Cook for 2 more minutes.
- Meanwhile, add all the sauce ingredients to a mason jar. Mix.
- When the noodles are cooked, drain and add to the pan of vegetables. Pour the sauce mixture on top and toss to combine.
- Serve with the roasted cashews and garnish as desired. Enjoy!

Hi. Loved this recipe. The souce is amazing.
The only problem I had was the ratio between the sauce and other ingedients. It would be super helpful if you could also give the approximate weight in grams for different ingredients. Carrots, potatoes, and cabbage can be vastly different in size, so I'm always having a bit of trouble with how much to use.

I have tried probably 10 recipes for peanut noodles and while some were decently edible, most were in some way unbalanced or just boring. This recipe is absolute perfection and the flavor I have been chasing for the last 20 years. It’s so savory and satisfying. It’s addicting and exciting. I only had white onion so I minced it tiny and added a little more garlic but it was still perfect. I doubled everything but the veggies and added a lot of shelled edamame at the end and all the flavors went so well together. I love that I had everything on hand already besides the shallots and didn’t have to run out to the store but this recipe is definitely worth a trip

Hi! I love this recipe but I have a small problem with the sauce - I use all ingredients except the hoisin sauce. The problem is that after combining and whisking it all together it turns a bit...sour? (Not sure if you'll know what I mean) And it's not smooth, has a bit off taste.. What am I doing wrong?

The first time we cooked this, we replaced the cabbage with mushrooms (we didn't have one at home and were too hungry to go shopping!).

An amazing recipe! I'm not a fan of stir fry but I was intrigued by the stir fry sauce and what a hit it was with my husband. I was sceptical of the veggie to boodle ratio but it worked. I was surprised by the assembly of the ingredients prior to cooking, it didn't take long at all. The lime is definitely a game changer. I did substitute peanut butter with Tahini, sriracha with gochujang and I drizzled some chilli oil just before serving. A recipe I'm going to have on repeat.

Really easy to prepare, healthy, and delicious. The red cabbage is not something I would have thought of but works really well. We sometimes add broccoli, julienne some courgette and a few sugar snap peas, and a bit less bell pepper than suggested. This has become one of our family's regular dishes, thank you Sadia + the team : ) Will be trying other dishes from the site for sure.

I LOVE this recipe! I just made it for the first time tonight and it was a major hit. It would've made for some yummy leftovers tomorrow, except that, well, we loved it so much that it's all gone!! My partner isn't a fan of strong peanutty flavor, so I mixed 2 tblspns of peanut butter with 1 tblspn of tahini and it turned out great! Love your videos, too!

This looks delicious! I've become slightly allergic to peanuts (I'm told its a carb sensitivity and not a protein allergy, since it's not an anaphylactic reaction) with bloating and inflammation. COuld any of your peanut sauce recipes be used with almond butter instead? I saw one commenter said they used tahini. I'm curious.

Sadia, this recipe was wonderful and super quick and easy to make. It was a hit in my household. I did do a different version of the peanut sauce, which I've included here in case you want to give it a go. This version of peanut sauce is great for dipping with those salad rolls too.
Peanut sauce: 5 Tbsp peanut butter, 2 Tbsp (22 mL) sodium-reduced soy sauce, 3 medium cloves garlic, 2 Tbsp Thai red curry paste, 1-2 tsp tamarind paste, 1-2 Tbsp (15 mL) sriracha hot sauce, 3 Tbsp vegetable oil, 1 Tbsp agave syrup or honey, a squeeze of lime (optional) 1/4 cup water (as needed to thin the sauce to your liking). Just pop all the ingredients in a blender.

I tried this recipe when you first featured it and have always loved it. Just thought I would share something as well :) Last week, I decided to make a batch of the cabbage and carrot on its own in the sauce for meal prep. I then paired it with brown rice/quinoa & tofu or tempeh on 3 different days throughout the work week; and i LOVED it. I never got bored of the flavor profile & crunch. I am trying the same approach this week, but swapping out different vegetables to have some variety. <3

I've made this for work lunch and it was great for 3-4 days, although it was best right after cooking! I added Shiitake mushrooms and fried tofu cubes. The sauce is deliciously creamy and well balanced!
my absolute go to recipe. It's quick, easy and versatile because you can just use what is in season or some frozen vegetables. The sauce was interesting. It is not like any sauce I have had in the past. It's acidic in a good way, creamy and thanks to the hoisin has a lot of depth in it. When making this recipe I quartered the peanut butter and doubled all the other sauce ingredients to make it match my taste and it was delicious! And I think I added crunchy fried tofu too!

Quick question, I want to try this recipe but I'm not able to get my hands on the hoisin sauce and sriracha hot sauce needed for the peanut sauce. I think they are simply just not available where i live. Can i leave them out without it affecting the taste much?Or are there any other substitutes?

This is my new favorite go-to meal! I subbed sriracha in for sambal oelek which I had never tried before. So good! I also like your trick to shake the sauce in a mason jar to mix it.
