Really tasty sauce and came together quickly!
This stir fry tastes lovely. The beauty of a recipe like this is that you can exchange all the ingredients depending on what you have at home. I made mine carnivorous, with peppers, mushrooms and carrots (ala what fridge gave tonight) and it worked perfectly well. Also used coconut aminos instead of soy sauce as I do find the use of soy a bit overly present in a vegetarian/vegan lifestyle. The stir fry sauce is yummy!

This recipe overall tasted good! I think the tempeh would have benefited from being marinated in the sauce longer.
I love stir-fries, and this one did not disappoint 👏 I'm happy to have another recipe using eggplant that I can come back to for an easy and tasty meal!

Oh my, this so yummy! I just made it for the second time 🤤 Since I had no eggplant, I used more bellpepper and added frozen peas and fresh spinach 🙌

Came out pretty well! A new version of eggplant recipe to try out. Modified a little since I didn’t have bell peppers and substituted tofu with Indian paneer to use what I had.
I did it with noodles and it’s good

Made this tonight with broccoli instead of green beans and added edamame. The tempeh was so delicious sliced thin. I've never prepared it that before. Everyone in the family loved it. I served it over cauliflower rice and added some peanuts on top for extra crunch.

Absolutely love this sauce! It’s gonna be one of my go-to’s. I add a bit of cornstarch when looking for a creamier sauce. It’s amazing!
