This was insane! The taste and textures surprised me. It was such a pleasure to eat and I couldn't believe I made it in my own kitchen. I also came back from a challenging trip to see family and came back a little sad and deflated; cooked myself something nourishing to take the mood a notch higher and this felt like a hug from myself...it was healing. Enjoyed this one a lot! I used almond butter instead of tahin as I didn’t have that on hand - worked nicely as well 😋Easy to make and can be mixed up with any veggies you have on hand. I added a bok Choi that needed using up!

Very delicious and surprisingly filling (must be all the protein 😄). I love the way the tofu is prepared resulting in nice crispy cubes. And the fact that I can sneak in so much spinach and my family doesn't protest....A big plus! 😆 Thank you for yet another delicious recipe! I will be making it again. And again.

I added some broccoli and instead of tahini, I used creamy peanut butter which made it delicious. Peanut butter makes everything better.
