Tofu was good. We think it would work better with rice than noodles. We added some sriracha.
I was sceptical to use noodles instead of rice at first but now I prefer eating curries with noodles. I’m the only vegan in the family but everyone ate and loved this dish!

I love a good tray bake recipe and this one hit the spot! I've never prepared tofu in this way before and really liked it. The marinade was delicious and complimented the flavours in the curry sauce really well. Such a tasty meal!
Very delicious, for my taste a little bit too "wet". Next time ich omit the extra water and it will be fine. I hat two purple sweet potatos, which turned the whole dish a little dark, so in the future ist will only use the golden ones.
This was a very satisfying meal! I couldn't find brown rice noodles so I used chow mein noodles that I had on hand. Also used kale instead of spinach.
that tofu was absolutely delicious! made it the night before and left it in the fridge which made prepping dinner really quick and easy. didn't have a red pepper but substituted with a green one and was still nice. will definitely use the tofu part of the recipe in another dish
Not bad, but the dish needs to bake longer than the time the recipe suggests. Otherwise, the veggies are half raw.

So quick and delicious, I halved the cooking time by using „pre-smoked“ Tofu and it worked really well. Still, looking forward to trying to „smoke“ the tofu myself😊
The marinade for the tofu is delicious! Weirdly the sweet potatoes didn’t get cooked all the way through…so just make sure you check it before removing from the oven! I baked for 30 mins. IMO the cilantro is not optional. I didn’t have it and it really missed it! And definitely the squeeze of lime!
Loving this app so far! And this recipe is great. “Smoking” the tofu is brilliant. Used brown basmati rice instead of noodles because it’s what I had. It worked out.
