Hi Preethi, thanks for your interest in the nourish bowl recipe and question. To keep the veggies from getting soggy, you can try cooking them for a shorter time on high heat so they stay crisp. You can also stir-fry them in batches to avoid overcrowding the pan which helps prevent excess moisture. Adding the sauce just before serving can also help keep everything fresh. I made this for a couple we met at a friend's get together. They are 30 years our seniors and were really interested in our choice to eat plant based.
They ask if we can invite them over for dinner, but to not prepare the meal before hand. They would like to prepare it with me so they can see and learn more about how to include more plants in their diet.
I picked this recipe because it is so versatile and can easily be swapped with different veggies or protein.
In between the cooking, wine and great company, we made friends with this great couple.
All this just because someone was genuinely interested in plant based.
100% recommend this recipe - you might just make a friend.

Delicious! I just increased the amount of sambal oelek to my liking (I did about 1.5 tablespoons). I’d definitely remake this one!

I overall liked the bowl, but I had to add agave syrup to the sauce. It was just sour/salty but was missing some sweetness. Maybe because I used peanut butter without sugar?

Hey Kira, thanks for sharing your experience with the nourish bowl. Our peanut butter doesn't include sugar in it, so sounds like perhaps too much lime juice may have been added instead. In case it helps, a lime yields around 30 mL (2 Tbsp) of lime juice for us 🙂. It's true though, that a sweetener can help to cut through any excess acidity, so we've added it as an optional ingredient in the list for now - thanks so much for helping us improve what we share!

Prepped this meal for 4 days of lunches and found it to be really tasty! However, since the instructions didn't mention what level to heat the veggies on I made my best guess and did medium heat...should've gone with medium low or low since the food was going to be reheated 😅. The veggies are a bit mushy, but that's partly on me! Micro greens were the perfect topping and will definitely be doing fresh squeezed lime over top as well going forward!

We recommend cooking the veggies on high heat as listed in step 3 to help them crisp up, but it's a good point that for meal-prepping, it is better to slightly under-cook the vegetables so that they are perfectly cooked when reheated 🤗

So yum! Beautiful recipe, definitely feeling i'm getting lots of nutrients eating this, but it's so delicious at the same time. My sauce was thick as i forgot to stir the coconut milk and used the cream lol and i forgot the vegetable boullion cube in the rice so will gove this one another go 😊

I loved this, my family felt a little meh, simply because tofu is normally their favorite part of a dish because we go heavy on the seasonings and dressings. The tofu in this dish is very basic which I didn’t realize my family has never really had until we served it up. I always try to stay true to the recipe the first time I make something to give the recipe a fair chance. I think going forward my family would like it better if I made a little extra sauce and then coated the tofu with it before plating, as they went nuts over the peanut sauce and the plain fried tofu contrast seemed to be what was throwing them off. We’ll be trying again soon with some extra sauce!

Made this recipe as a batch meal for the week. Super fun to open the Tupperware to a colorful zesty meal. We are a fan of Robin's gado gado recipe; this dish had a kin-like taste. We enjoy varying heat levels in our household so it was nice to have a hit of heat in the base sauce and the be able to build upon it further. I'll have to try adding the peanuts next time, and maybe some crispy onions when I don't have to refrigerate, to add more texture to the dish.

Probably the nourish bowl I have made most from the great selection on PUL. I tend to make a batch that then feeds me for three evening meals. It’s my go to for when I have some red cabbage to use up. I love all the colours (although tend to sub out the pepper for more carrot due to personal preference) and the little kick by adding hot sauce to the peanut, lime and coconut in the sauce is *chefs kiss*
