Gimbap, or Kimbap, if broken down, translates to 'gim' (a sheet of dried seaweed) and 'bap' (rice). Gimbap is a Korean type of rice roll - a very packable dish often enjoyed during picnics or outdoor events, though it’s also a popular lunch option. You can fill gimbap with anything you like: try cooked mushrooms, eggplant, or zucchini; swap in different pickled vegetables; or replace the tofu with your favourite plant-based meat alternatives from the supermarket.

I used this as a guide and my filling was the tofu, avocado and thinly sliced fresh greens and it was soo good!

This recipe looked so good that I wanted to try! So I spent an eternity prepping every component, eventually rolled it, and..... Turns out I don't like nori sheets! I felt frustrated, but got comforted because this recipe works great as a bowl too! And it tastes great 😊

Oh no! We totally get how frustrating that can be, especially after all that effort, Margaux! We're glad you found a way to enjoy the recipe as a bowl instead - sometimes a little pivot can make all the difference 🫶

This recipe is perfect! I’ve been making it every week for picnic dates. My boyfriend really enjoys them and that’s coming from someone who doesn’t like vegetables. Highly recommend!
