Fresh Salad Rolls with a Creamy Peanut Hoisin Sauce

Rice paper rolls are one of my favourite summer meals. They don't require an oven or a stove, and they are so crisp and refreshing to eat. You can pack them with all kinds of vegetables and noodles to help soak up all your delicious sauce.

Ingredients

Salad rolls

  • 1.8 oz (50 g)
    dry white vermicelli noodles
  • ½ cup (70 g)
    frozen shelled edamame
  • 6
    rice paper sheets
  • 1
    avocado, thinly sliced
  • 2
    red bell peppers, julienned
  • 1
    carrot, julienned
  • 1 cup (70 g)
    shredded red cabbage
  • ½
    cucumber, seeds removed, thinly sliced

Peanut sauce

  • ¼ cup (60 mL)
    peanut butter
  • ¼ cup (60 mL)
    hoisin sauce
  • ½
    lime, juiced
  • 3 Tbsp (45 mL)
    water

Directions

  1. Add the rice noodles and edamame into separate bowls. Pour plenty of boiling water over each. Set aside for 5 minutes, then drain.
  2. Meanwhile, add the sauce ingredients to a small bowl and mix. Add a bit more water if a thinner consistency is desired.
  3. In a large shallow dish, soak 1 sheet of rice paper in lukewarm water for 5 seconds. The paper will continue to soften even after removed from the water. Avoid over-soaking to prevent tearing when rolling.
  4. Let the excess water drip off the paper, then transfer the sheet to a large plate. In a line across the centre, add some rice noodles, edamame, and veggies.
  5. Wrap the salad roll like you would a burrito: folding in the sides, then tucking and rolling. Cut in half using a sharp knife*.
  6. Serve the rolls with the peanut sauce or with a sweet chili sauce, and enjoy!

Notes

  • * It can help to lightly brush each side of the knife in just a little bit of oil, so that the rice paper and noodles don't stick to the knife.

Storage

  • Store in an airtight container lined with a damp paper towel or cloth in the fridge for up to 3 days.

This recipe was a bit meh for us. The rice paper was really sticky so maybe i did something wrong there. The kids decided to dump the contents on their plate and eat it with their hands, so we still had fun with it!

Sorry to hear the rice paper was sticky, Atro! Sometimes if we soak the sheets for too long they can get overly sticky, as they continue to soften once removed from the water, in case it helps. It sounds like your kids made the best of it, though, and we appreciate your feedback 😊

I found this recipe to be quite laborious, taking me about 2hours! I did though have to prepare the edamame ,since the ones I found had the “shells” on, and I made the whole packet of rice sheets, so 16 rolls. But they turned out very good, I would just probably consider them mostly as a group activity when I have friends over. And the sauce works really well here, it’s almost addictive!

Has anyone tried this sauce with a different nut butter besides peanut butter? I’m allergic to peanuts, and although I’m sure the sauce is perfect as written here- I’m hoping for a decent substitute…

Hey Kathy, you can use another nut butter like almond butter! Depending on where home is for you, there may also be peanut-free options that mimic peanut butter such as "wow butter" 😊

Made these tonight, and they were superb! I’ll definitely need to practice with the rice wraps- we had some with holes in them… I decided to take the easy way out: the leftover veggies and noodles will be a nourish bowl for tomorrow’s lunch!

Finally got round to make this! 😊

Found the paper in one of our usual supermarkets and today I decided to give it a go before going to Spain.

Put some twist to the recipe tho 🤭: brown rice, lettuce, cucumber, avocado, red pepper, carrot, edamame beans and mixed it all with vegan alioli (a sort of Spanish type of garlic mayo). Took some time to learn how to make the little sachets, but all in all they looked good and, best of all, were really yummy! 🤤 I hope to be able to make them for my family if I find the paper there.

I'm discovering new flavours (I love avocado now), new ideas to prepare food and new recipes (peppermint mocha is one of my favourites now). And it's all because of PUL. 🤗💜 Thanks everyone for everything and to Sadia and Robin, CONGRATS! 🥳

I am planning to cook this over the weekend, but was curious in regards to the lack of any spices in this recipe... as I have never had rice paper before, was wondering, would adding a few spices like salt and black pepper ruin its integrity, or the taste of other elements in the recipe?

Hey Priti, the sauce for this one is quite flavourful so we opted to limit spices to let the sauce shine. You're welcome to add spices if desired though! It may impact the taste depending on how much you add but shouldn't impact the integrity 😊

I have been making this recipe so much this summer as the rolls are so fresh and tasty as well as fun to make. From my experience last year, I have now learnt which is the best rice paper to buy as the first type I tried easily ripped. I also now add some iceberg lettuce for an extra layer of crunch in the rolls which I really like. The peanut hoisin sauce is the highlight!

This recipe is so good! It took me a few tries to get the rolling but I figured it out. I found out it’s easier not to overstuff the rolls with veggies.

I absolutely love this sauce recipe specifically. I always tend to modify what is in the summer rolls based on the vegetables I have in my fridge, but I jar this sauce and just use it for the week to make them because I find it so tasty! It truly just elevates the summer roll and makes it much more filling. I sometimes leave out the noodles in this, sometimes I add tofu. Play with what is in the roll and it's like a new meal each week but the sauce is PERFECTION
