Almond butter is a staple in our home, and we add it to just about everything: toast, pancakes, oatmeal, smoothies, and even added into dressings. It's unbelievably easy to make yourself at home: just 1 ingredient + 15 minutes is all you need.
Place the almonds onto a baking tray and preheat the oven to 350°F (180°C)*.
Toast in the oven for 9 - 12 minutes, stirring occasionally until golden and fragrant**. Allow the almonds to cool slightly, though not completely.
Add the toasted almonds to a high-powered food processor (ideally 900W or higher)***.
Start processing the almonds at high speed. After a minute or two, the almonds will turn into a coarse meal.
When the almonds start to stick together, stop the processor and scrape down the sides with a spatula.
Continue processing for at least 7 - 10 minutes****. The almonds will go through several stages: from meal, to a dough-like ball, and finally to smooth almond butter.
Let the mixture cool, then store it in a jar. Enjoy!
Notes
* We used top and bottom heating (not fan-assisted/convection).
** The almonds will continue to "bake" even when removed from the oven, so be careful not to overcook.
*** Use a food processor and not a blender for this. If the mixture heats up, let it rest to cool slightly so as to not damage your food processor.
**** If your food processor isn't very powerful, blend for an additional 5 minutes to achieve the desired consistency. You can also add a bit of neutral-tasting oil to help the process along.

This did not work very well for me, even with a good food processor. I had to stop mixing at one point because I feared my neighbours would ring my door. 😅

Hey Kira, oh no! I wonder if you didn't roast the almonds for long enough or if they cooled? We prefer blending the roasted almonds when they're still toasty as it helps them blend smoother.
If your food processor isn't very powerful, you may need to blend it for an extra 5-10 minutes to achieve the desired consistency. Pushing through can make all the difference! You could also consider adding a bit of vegetable oil or coconut oil to help the process along 🙂 We hope this helps for now and you enjoy the almond butter recipe if you give it another try 🫶

my old food processor got it to powder but wasn't getting the oils out, so I gave my nutribullet (600w) a chance and it worked! perhaps the motor strained a bit... but I think it's fine 😗 yum yum

Mine did not work sadly. I hava an Ninja food processor 850 Watt, i bleded it pretty long (more then 15-20 minutes) but I only got a powder consistency, nut "buttery" like yours. I added water to it but it was not very good. Do I need to add oil and how much? I don't want to eat too much oil. Or I should I try something else? Or another nut? I would love to hear from you!

Hiya Froukje, we're sad to hear this! Did you scale the recipe at all? Our food processor is 1100 W, so your machine would indeed need to push through a bit more. If it's also older or has a different type of blade, you may need to blend it for an extra 5-10 minutes to achieve the desired consistency. You could also add a bit of vegetable oil or coconut oil to help the process along. You could start with a tablespoon for 25 servings and add more as needed 😊 We hope this helps for now!

Hey Alana, we only use plant-based products here so we haven't before. Due to the high fat content in the nuts, adding a water-based sweetener like honey will cause the mixture to "seize" and become thick. You could try sweeteners like maple syrup, agave, powdered sugar, or coconut sugar instead :)

I think my oven wasn't hot enough for something, because I roasted for 7 minutes but they weren't as fragrant as I expected and my almond butter kind of tastes like raw almond butter. My instincts were to roast for longer, but I saw the note about the almonds continuing to "bake" after taking them out of the oven, so I didn't. I'm eager to try this again with a 10 minute roasting time!

Hi Romane! We haven't broken ours, but we've been mindful not to push it, and we've only ever made nut butter in a high-powered food processor. Weaker ones might not be able to do it. An off sound or smell are two signs the food processor is being pushed too much. It can help to turn off the food processor for 30-60 intervals as needed, and then continue blending to help avoid this. I want to make that almond butter therefore I am currently looking at the Magimix food processor you suggested. As I am cooking just for myself I thought I would get the mini Plus but the power is only 400 W. What is the minimum power you would recommend to be able to make that recipe without breaking the food processor?

Hi DeeGee, indeed if left to sit long enough the almond butter will separate a bit. This is normal as the oil tends to go to the top when untouched for a while. Giving the almond butter a good mix before using it, or storing the almond butter in a sealed jar upside down in the fridge can help minimize or prevent the separation if desired ✨🤗
