Looking for ways to enjoy hazelnuts? This hazelnut butter recipe is a must-try! We’ve already featured blended hazelnuts in our vegan Nutella recipe, but homemade hazelnut butter is also incredibly tasty on its own! Enjoy it on toast, in oatmeal, or as part of a dessert recipe. Pairing it with chocolate is also a combination you won't want to miss!

Directions

  1. Preheat the oven to 350°F (180°C)*. Spread the hazelnuts onto a baking tray and bake for 9 - 10 minutes, until lightly golden, stirring once halfway.
  2. Place the toasted hazelnuts in a food processor (ideally 900W or higher). Blend on high for about 6 - 8 minutes, or until smooth**.

Notes

  • If your hazelnuts have the brown skin still on, you'll have to remove it after you take them out of the oven. When cooled enough to handle, rub them firmly between the palms of your hands.
  • * We used top and bottom heating (not fan-assisted/convection). Be careful not to overcook, as the nuts continue to 'cook' even when taken out of the oven.
  • ** If your food processor isn't very powerful, blend for an additional 5 minutes to achieve the desired consistency. You can also add a bit of neutral-tasting oil to help the process along. Using a blender is not advised.

Storage

  • Store in an airtight container or mason jar in a cool, dry, and dark place for up to 1 month.
  • Store in the fridge for up to 3 months.

How can I remove more of the hazelnut skins?

It can be a bit tricky to get all the hazelnut skins off! We find that rubbing them firmly between our hands works well. Once they’ve cooled enough to handle after roasting, give them a good rub between your palms to help loosen the skins.

Why is my hazelnut spread grainy?

Its key is to ensure the skin is removed and allow the nuts to mix for longer for a smooth texture - a few minutes can make all the difference! If it’s still a little grainy, try adding a tablespoon of coconut or vegetable oil to the mix to make the spread creamier.

Can I use pre-roasted hazelnuts?

We prefer roasting fresh nuts although using pre-roasted will do if that’s what you’ve got on hand. It’ll make for a chunkier spread which can be a fun twist. If the nuts aren't roasted enough, popping them in the oven for a bit before blending, or adding a neutral oil will help everything blend more smoothly.

How can I enjoy hazelnut butter?

We love to spread it on toast, swirl it into oatmeal, blend it into smoothies, or use it in desserts. It pairs especially well with chocolate for a decadent treat!

I wasn’t paying attention and just roasted raw hazelnuts. Can I blanch them now? Or should I just do my best to remove as much of the skins as possible?

Hey Elizabeth, since the hazelnuts are already roasted, we wouldn't recommend blanching. The best option is to rub the roasted hazelnuts between your hands or a clean kitchen towel to remove as much of the skin as possible 🫶

The whole thing about making homemade things is that they should be healthier for you so I firmly believe that Making any type of nut butter at home you should just be putting the nuts in the food processor and eliminating the roasting because the heat can damage fats in the nuts.

Hi there, Dixie, we haven't used the Vitamix for making nut butters like this hazelnut butter recipe before, but we've heard it's possible. The main tip would be to stop if you feel the blender is heating up too much - you don't want to risk damaging such an expensive machine! 😜

Homemade nut butter should be healthier and roasting the nuts is not going to make them healthier because it's going to damage the fats in the nuts it's no different than buying dry roasted nut butters that are already pre-made. The thing with homemade things is that they should be healthier for us. If I was going to make a nut butter at home I would totally just be eliminating the roasting part. Roasting is supposed to bring out the flavour but you're going to have flavour regardless if you bypass that step.

Worked just as you said. We did have a little trouble with some skins not coming off completely, but it really did not affect the end result to have a little bit of skin in the mix. Thank you! I feel more confident in making nut butters. Your recipes are very consistent and come out as expected!

You can put nut butters on celery just like how people put cheese whiz on celery. You could put nut butters inside baked goods so for example as you fill up a muffin tin you could pour batter halfway in add a little nut butter pour the remaining batter or just mix the nut butter with the batter when you're preparing it. You could incorporate nut butters into a fairly easy dessert type ball to make. I used to love these balls when I was a kid my mother always made them they were made with rolled oats, chocolate, coconut, etc. and because nut butters are so thick they will definitely hold the ball shape. These type dessert balls that I'm thinking of don't take very long to prepare, if you have children you can roll them in sprinkles, you can make different sizes, if you have kids with smaller mouths make smaller ones. You could make a s'more type thing with nut butter in the middle instead of chocolate and maybe just use a marshmallow cream on top of the graham wafer. Some people might like nut butters with eggs when you make an omelet put a bit in the middle of the omelet. You could put nut butters on puff pastry and make elegant looking little appetizers. The possibilities are endless how to use nut butters you just have to be a little creative and use your imagination.

this recipe looks so exciting to make and I can’t wait to do so, but before making it I just have some questions to ask about such as the heating sides!l I use a toaster oven and since it’s different than a regular oven, which side do I preheat and turn on when toasting the nuts, the upside or downside or both? the toaster oven has many options and I’m new to it but as I’m really cautious and want make it the best way possible, I had to ask about that. Either option sounds lovely though and you could always adjust the time or temperature in the toaster oven if needed. As long as the hazelnuts toast until lightly golden. I try few methods to remove skin and I just cant remove it all,can i bleach hazelnuts in boiling water with baking soda,peel them and then toast them and make butter,will bleaching change hazelnut texture? I dont know is homemade bleaching came out same as bought one!

Hey Mary! Do you mean blanching by any chance? We would strongly recommend avoiding the use of storebought bleach on food products as it can be very dangerous.

If it's possible to purchase blanched hazelnuts, this may be easier, although you can blanch them at home as well. There are several recipes online that use water and baking soda successfully. Removing the skin will help the hazelnut butter become smoother and creamier 😊

To remove skins, I toast in the oven first, when they are almost cooled I put them into a Tupperware container with lid on, and shake shake shake! This gets almost all of the skins off.

I have just made this incredible Hazelnut butter! For the longest time I've wanted to make it, tried different recipes but this is by far the best!!
I came up with a little trick in getting the skins off of the hazelnut, I just used my spatula and rubbed the top of the hazelnuts with it, most of the skins came off.

Curious question - my batch this round is little grainy, drippy-smooth but grainy. Is this common?
