Would you recommend substituting vanilla sugar with vanilla beans instead?

I usually prefer not to sweeten the nut butter but would love to combat the bitterness from pumpkin seeds

Heyy Simran, great Q! Vanilla bean is a great swap for the vanilla flavour in the vanilla sugar, but it won’t provide the sweetness that helps balance the pumpkin seed bitterness. Also, liquid sweeteners like maple syrup or agave can make nut butters thicken and sometimes seize or turn a bit grainy, because the water in the syrup doesn’t emulsify nicely with the oils. If you want sweetness with less risk, dry sweeteners tend to work best, so if you do find it too bitter, you can always add it bit by bit to taste :)

Can I omit the coconut oil entirely or replace it with sunflower oil?

Heyy Anne-marie, you can replace the coconut oil with sunflower oil. It’s mild in taste and will help the nut butter blend into a smoother, creamier consistency. You can also omit the oil if you prefer, although the texture may turn out a bit thicker or less silky. We’d only recommend skipping it if your food processor is quite powerful!

This almond butter is amazing! I made half a batch first to test, but I'm already starting on a full batch a few days later. Can't get enough!!
