Yakisoba is a Japanese stir-fried noodle dish that combines ramen-style noodles with some (mock) meat, veggies and umami yet slightly sweet yakisoba sauce. For this recipe, we make our own sauce, which is surprisingly simple and super delicious!

Ingredients

Stir-fry

  • 7.1 oz (200 g)
    dry yaki soba noodles
  • ½ Tbsp (7 mL)
    vegetable oil , for frying the chick'n
  • 7.1 oz (200 g)
    mock "chicken" pieces
  • ½ Tbsp (7 mL)
    vegetable oil , for frying the noodles
  • 3.4 oz (95 g)
    shiitake mushrooms, sliced (optional)
  • 1
    small onion, thinly sliced
  • 1
    carrot, julienned
  • 2 cups (128 g)
    shredded green cabbage
  • 2
    stalks green onion, cut into 2 cm strips (optional)
  • 1 cup (90 g)
    fresh bean sprouts (optional)

Yakisoba sauce

Directions

  1. Cook the noodles according to the package instructions, then drain and set aside.
  2. Meanwhile, mix together all the sauce ingredients in a small bowl.
  3. Heat some oil in a sauté pan over medium-high heat. Add the mock “chicken” to cook until golden. Then transfer to a plate.
  4. Add some more oil to the now-empty pan, and add in the cooked noodles. Cook until lightly golden, about 4 minutes, stirring minimally. Transfer to a plate and set aside.
  5. Add the shiitake mushrooms to the now-empty pan. Cook for 2 - 3 minutes.
  6. Add onion, carrot, and cabbage. Cook for another 3 minutes.
  7. Lastly, add the noodles, mock 'chicken', sauce, green onions, and bean sprouts (if using). Cook for another 3 - 4 minutes until fully heated through.
  8. Garnish as desired, and enjoy!

Notes

  • Yaki soba noodles are essentially Chinese-style wheat based stir-fry noodles.

A.M.A.Z.I.N.G.!
I'm a picky eater cause of texture sensitivities so I was a bit worried to try this at first, but this hits the spot! I've made this recipe 10x or more in the past 6 months, and would eat it 2 days in a row! It's amazing, and also easy to make :) the sauce is especially addicting!

I also use Edamame instead of vegan chicken when I can't find it, and personally find it a bit more refreshing that way aswell! Definitely recommend throwing edamame in there!

Only thing I've been wondering, is if this would be safe to freeze as a mealprep dish? I currently always make a bigger batch and put some in the fridge for 2 days max, but I wonder if freezing would also be fine.

We haven’t tried freezing this recipe, but we think it could work—especially if you cook the noodles until al dente. Let the dish cool completely, then freeze it in an airtight container. When reheating, you might just need to add a splash of water or soy sauce to keep it from drying out 🤗.

My soy sauce is on the saltier side, so I used less and it was delicious! I also added a half tablespoon of rice vinegar to the sauce

Yum! I changed the sauce a bit because it was too sweet for my taste (removed the sugar and swapped some of the ketchup for white wine) but besides that it was delicious!

Hey there, Caitlin, black soybean sauce works as a nice substitute and is often available in international grocery stores. Otherwise, you could try hoisin sauce or more soy sauce to taste 😊
