1 tsp (5 mL)toasted sesame oil

13 oz (360 g)pre-cooked udon noodles
Recommended toppings

Directions
- In a small bowl, mix the Asian sesame paste, miso paste, bean paste, and almond milk.
- Add the oil to a sauté pan on medium-high heat. When hot, add the shallot, garlic, ginger, and shiitake and cook for 5 - 7 minutes.
- Add the stock and miso mixture to the pot. Bring to a boil, reduce to a simmer, and cook uncovered for 5 - 7 minutes.
- In the last 30 seconds add bok choy, tofu, and sesame oil.
- Meanwhile, cook the noodles separately for 30 seconds, or according to the package instruction. Drain and add to the bowls.
- Pour the soup over the noodles and garnish with desired toppings. Enjoy!
Notes
- †Asian sesame paste differs from tahini, offering a richer, more intense flavour. It's made from deeply toasted sesame seeds, unlike tahini's raw or lightly toasted seeds. Find it at your local Asian supermarket.
Storage
- This dish is best enjoyed immediately.
- The broth can be made a day in advance and stored in an airtight container in the fridge for up to 3 days. Reheat on the stove and add the tofu, bok choy, and any other toppings before enjoying.

We find the spice level has just the right kick without being too intense. If you’re craving more heat, you can easily add a bit more chili paste or garnish with chili oil or sliced fresh chilies. Made this tonight and it was enjoyed by all. Agree with Sadia, this is a more creamy ramen broth. I used a barista oat milk instead of almond milk and it worked really well. Please do not substitute the sesame paste with Tahini. It is not the same. Please look up how to make roasted sesame paste online and make it from roasted sesame seeds if you cant find the asian sesame paste. Next I will try Robin's ramen but I will need to go to the store to get some of the ingredients first.

Omg this is amazing!!! I tweaked it a little bit though. Pak choy is expensive so i used napa cabage and fried it separately together with some green beans. I flavored beans and cabbage with 1 tbsp ssamjang (but i an sure miso would also work), 2 tbsp soy sauce, ginger and sesame oil. I also used regular tofu since tofu puffs were not available to me and just fried it with soy sauce and corn starch. Also, don't skip on shiitake - they elevate this dish from tasty to glorious! :)
I added a few drops of lemon and organic lemon peel . It was so fine. 😊

OMG the best ramen ever!!
It tastes like laksha bowl. I made few adjustments replaced almond milk with coconut. Stir fried all the vegetables in coconut oil. Used vegetables like beans, onion, button mushroom and carrot. Boil the beans with some salt. Caramelise onion without salt. It will give a sweet texture when you use it as a dressing on top.
For the sauce.
2 tsp miso paste
2 tsp chilly oil
1/4 cup coconut milk
2 sesame paste

One of our favourites in winter! So easy to make and reminds me of tan tan men ramen. As toppings I usually add what I have on hand. Usually I put crumbled, pan-fried tofu on top.
Decent recipe, overall quite enjoyable and will come back to it again. Used tahini in it and would probably have to cut back on it to get it tasting truly amazing.

This one just wasn't for me. I subbed tahini for the sesame paste and found the flavor very overpowering. Tahini was all I could taste. I doubled the veggie stock and that helped mellow things out. I think the tahini also separated as it cooked, so there was an odd fatty gritty quality floating in the broth as well as an oil slick look because of all the oil. It just wasn't very appetizing. :/
I also got confused if the carrots and sprouts were considered toppings and when they were supposed to be added.

It's a great recipe! Like I like creamy dishes and most of the ingridients in this recipe, to be fair, but I couldn't imagine it to taste so gorgeous! PUL Team, it would be nice, if you would recommend some variations on the veg, as I have been indulging in the ramen for some days and might need to add some diversity to my diet😅 And it's also beginner friendly for sure, (tested on myself) as I only start to learn cooking Asian dishes and still have struggles with some other recipes, which for some reason do not taste in the end. So definitely worth a try! Precation: might cause cravings for it.

I’ve been really nervous to make my own Ramen for some reason, but tried this recipe and shaboozle bam! It was amazing. I actually added a wee bit more miso and some cashew butter for the creaminess. The broth was also boiled with a piece of kombu. Will make this almost every day I think!

We used stir fried tofu instead of the tofu puffs and it was perfect. Also added some peanuts for a crunch and loved it.
Very good! The broth was very tasty. I think that I will prepare these ramen at least once a week. ^^ It is quick and easy to make, with ingredients that you can find in any Asian store.

I couldn't get a couple of the ingredients so I swapped them out and also used brown rice noodles to make it GF, but it still tasted wonderful! Will definitely be making again! UnfortunatelyI had some issues with the sesame paste (i used Tahini) since they're always a bit different in consistency/oiliness - so when it was cooking it started to flock. Maybe it was the fusion with the milk?
HOWEVER I tried it again with peanut butter which was way smoother, I also recommend adding a tsp of sweetener (like Agave sirup) to cut through any "bitterness".

I had JUST run out of soy sauce so tried Sam's Miso ramen first (sorry Robin lol) and...this is the real deal. It's sooooo good!!! Unsure how I've lived 26 years without this recipe. I swapped in some random fermented chilli garlic paste I found in my fridge for doubanjiang and topped with things I had on hand, and it was easily the best ramen I've ever made (or bought??!). Looking forward to seeing how Robin's shoyu ramen stacks up! 😉
